Tutto inizia nel 1956 quando Euride Zini, emiliana Everything begins in 1956 when Euride Zini, an Emi-

DOC, fonda un piccolo pastificio nel cuore di Milano,
che ancora oggi porta il suo nome. Era pasta fresca,
quella vera, che andava mangiata subito oppure con-
gelata. Oggi Zini porta avanti questa tradizione, ri-
spettando le ricette di una volta e rifiutando di usare
ingredienti non naturali come coloranti e additivi.
Per la conservazione dei suoi prodotti ricorre ad un
solo elemento naturale: il freddo.

immediately or be frozen. Today Zini continues this
tradition by respecting the original recipes and by
refusing to use non-natural ingredients like colorants

just uses one natural element: cold.

Ricercatezza, qualità e passione: sono questi gli ingre-
dienti che permettono a Zini di trasformare tutti i gior-
ni un piatto di pasta in un capolavoro, con l’obiettivo di
promuovere l’eccellenza del made in Italy nel mondo.
Con la sua consolidata presenza in tutti i mercati euro-
pei e la forte propensione ad esplorare nuovi mercati
anche su scala mondiale, Zini è oggi un importante pun-
to di riferimento nel settore della pasta fresca surgelata.
Il modernissimo pastificio dispone di una superficie pro-
duttiva totale di 7.000 mq, 8 linee di produzione, un la-
boratorio interno certificato ed uno stabilimento intera-
mente dedicato alla lavorazione di prodotti senza glutine.
La versatilità delle linee di produzione permette di
sviluppare referenze su misura e di collaborare con
la GDO attraverso l’offerta di soluzioni alternative
nell’ambito delle Private Label.

Detail, quality and passion: these are the ingredients
that allow Zini to transform everyday a plate of pasta
into a masterpiece, with the goal to promote worl-
dwide the excellence of made in Italy products.
With its strengthened presence in all European
markets and the strong propensity to explore new
markets on a global scale, Zini is now an important
reference point in the sector of fresh frozen pa-
sta. The very modern pasta factory has a total pro-
duction area of 7,000 square meters, 8 production
lines, a certified internal laboratory and a plant
entirely dedicated to the processing of gluten-free
products. The production lines versatility allows to
develop tailor-made references and collaborate with
large-scale retail through the offer of alternative so-
lutions in the Private Label range.

E la differenza si sente...
Zini produce, cuoce e surgela i suoi prodotti in tem-
pi  rapidissimi, in modo da preservarne il gusto e la
naturalità a lungo. In questo modo si eliminano tutti
i  processi di conservazione come la pastorizzazione
a vapore e il confezionamento in atmosfera protetti-
va (con CO2). Inoltre, la cottura in acqua non altera in
alcun modo le proprietà dell’impasto, che si mantie-
ne fragrante come appena fatto.
FRESCA COME APPENA FATTA
Zini utilizza solo  semola di grano duro:  colore vivo,
gusto e ottima tenuta della cottura. L’impastazione  è
effettuata con una tecnologia esclusiva, che garanti-
sce  una capacità di assorbimento del sugo molto su-
periore grazie alla microporosità della superficie.
I prodotti Zini possono essere rinvenuti direttamen-
te in padella, nel microonde, nel forno o semplice-
mente  scottati in acqua bollente per pochi secon-
di… senza sprechi di tempo, di prodotto o di acqua.  water.
PRATICHE CONFEZIONI
Tutti i prodotti sono confezionati in pratiche  buste
da 1 kg: niente confezioni aperte nei freezer, evitan-
do possibili contaminazioni; inoltre su tutte le buste
sono riportati gli ingredienti, gli allergeni, il lotto di
produzione e la scadenza.

And you can feel the difference...
Zini produces, cooks and freezes its products in a very
short time, in order to have a long-term preservation
of its flavour and naturalness. This way it is possible
to eliminate all conservation processes like steam pa-
steurization and modified atmosphere packaging (with
CO2). Moreover, water cooking does not vary the pro-
perties of the dough, which is maintained as fresh as
just made.
Zini only uses durum wheat semolina for all its pastas:
bright color, taste and excellent “Al Dente” bite. Egg pa-
sta kneading is carried out with an exclusive technolo-
gy, which guarantees a much higher sauce absorption
thanks to its microporosity.
Zini products can be revived directly in the pan, mi-
crowave, oven or simply seared in boiling water for
a few seconds... without any waste of time, product or

possible contamination during the storage. All infos
like ingredients, allergens, nutrition facts, lot and

gli standard internazionali non è un traguardo, ma
uno stimolo a migliorare ancora.
Zini è stata la prima azienda del settore a conseguire le
certificazioni europee per la Garanzia Qualità e la Sicu-
rezza Alimentare, ottenendo per entrambi gli standard
il massimo livello. Inoltre è certificata per produzioni
bio dinamiche, per alimenti Halal e Gluten Free.

Il 10% del personale Zini è impiegato nella Assicu-
razione Qualità e R&S con l’obiettivo di sviluppare
nuovi prodotti e processi per anticipare le aspettative
dei partner. I laboratori Zini dispongono di una divi-
sione interna dedicata al controllo qualità e sempre
nuove ricette sono ideate in collaborazione con lo
Chef Tomas Morazzini.

achieve European certifications of Quality Assuran-
ce and Food Safety, obtaining for both the highest
standards. It is also certified for biodynamic pro-

LA RICERCA DELLA QUALITÀ
10% of Zini's staff is employed in Quality Insurance
and R&D with the goal to develop new products and
procedures to anticipate partners' expectations.
Zini labs have an internal department dedicated to
quality control and new recipes are always created in
collaboration with Chef Tomas Morazzini.

FOCUS ON ENVIRONMENT
Il raggiungimento dell’eccellenza qualitativa ha
come alleato il rispetto per l’ambiente, posto al cen-
tro di ogni passaggio del processo produttivo.
Filiera
Il percorso inizia da un’accurata selezione delle mate-
rie prime, che privilegia sempre i fornitori a km zero,
raggiungendo il duplice scopo di valorizzare le realtà
locali e di ridurre al massimo l’impatto sull’ambiente.
Produzione
La fase produttiva prevede l’impiego di tutta una serie
di tecnologie eco friendly che consentono di ridurre
al minimo i consumi. Inoltre:
• Zini dispone di un sistema all’avanguardia per la
purificazione delle acque
• Contribuisce a ridurre l’inquinamento atmosferico
attraverso l’utilizzo di nanotecnologie applicate ad
intonaci speciali.
L'AMBIENTE AL CENTRO
Consumo
La pasta viene sempre cotta prima di essere surgelata,
quindi i tempi necessari per la preparazione diminui-
scono di molto, con un conseguente risparmio di risor-
se energetiche. Infine, i tempi ridotti associati alla facile
porzionabilità, consentono di preparare la pasta Zini al
momento. Questo permette di eliminare gli sprechi, ele-
mento particolarmente rilevante nella ristorazione.

The respect for the environment is the main ally to
reaching qualitative excellence, and it is placed in
the middle of each productive process.
Supply chain
The route starts with an accurate selection of raw mate-
rials, always preferring km 0 partners, hence reaching
the double goal of valuing local communities and redu-
cing as much as possible the environmental impact.
Production
A whole set of eco friendly technologies are used in the
productive stage, allowing the consumption to be redu-
ced to the minimum. Furthermore:
• Zini has an avant-garde water purification system
• Contributes to reduce atmospheric pollution through
the use of nanotechnologies applied to special
plasters.
Consumption
Pasta is always cooked before being frozen, so prepa-
ration time is reduced by a lot, with a consequent eco-
nomy of energy resources. Finally, reduced timings and
the chance to create portions easily, allow to prepare
Zini pasta on the spot, avoiding precooking based on
consumption forecasts. This allows to eliminate wastes,
an especially relevant element in food service.

L’impronta Idrica è il volume totale di acqua dolce
consumata ed inquinata durante tutto il processo di
produzione.

Grazie al procedimento di cottura prima della surge-
lazione, Zini consente un risparmio idrico di oltre il
95% in fase di preparazione*.
La sfida
La sfida per il futuro è di migliorare ulteriormente
questi risultati. Nello specifico l’azienda si è data l’o-
biettivo concreto di ridurre del 10% i propri consumi
nelle fasi industriali entro la fine del 2018.
*Analisi svolta in collaborazione con la Facoltà di Scienze Agrarie e Ali-
mentari dell’Università degli Studi di Milano basata sui metodi per il com-
puto proposti dalla norma ISO 14046 Enviromental Management Water
Footprint.

WATER FOOTPRINT
What is it
Water footprint is the total volume of water con-
sumed and polluted during the whole production
process.
Zini footprint
The cooking procedure used before freezing the pro-
duct, allows Zini to save over 95% of water*.
The challenge
The challenge for the future is to further enhance
those results. Specifically the company has set a con-
crete goal to reduce its consumption by 10% within
the end of 2018.
*Analysis made in collaboration with the Faculty of Agrarian and Food
Sciences of the Università degli Studi of Milan based on calculation
methods proposed by ISO regulation 14046 Environmental Management
Water Footprint.

Zini propone una soluzione innovativa per la ristora-
zione veloce, sperimentata e testata in prima persona
a Expo Milano 2015 attraverso Zini Gourmet, il risto-
rante street food con cui ha partecipato da protagoni-
sta alla manifestazione.
A seconda delle esigenze, sono disponibili due mo-
delli differenti di macchine scaldapasta da banco bre-
vettate, estremamente pratiche e perfette per creare
un vero Pasta Corner indipendente e facilissimo da
utilizzare. Ideali anche per eventi e qualsiasi contesto
di ristorazione veloce.
Zini proposes an innovative solution for fast food
outlets, experimented and tested firsthand at Expo
Milano 2015 through Zini Gourmet, the streetfood
restaurant with which it participated as key player in
the event. According to the needs, two different mo-
dels of over-the-counter pasta heating machines are
available, patented, extremely practical and perfect
to create a real independent and very easy-to-use Pa-
sta Corner. Also ideal for events and any context of
fast-food outlets.

MINILUNCH ZINI
Interamente in acciaio, può essere collegata alla rete idrica, scal-
da fino a 2 kg di pasta con 2 cestelli indipendenti ed è abbinata al
pratico scaldasughi a bagnomaria.

Made entirely of steel, it can be connected to the water network, it

heats up to 2kg of pasta with two independent baskets and is com-
bined to the practical bain-marie sauce heater.

with all the taste and consistency of traditional pasta.
Practical and adaptable, it can be prepared even in the

and authenticity of traditional polenta, one of the ol-
dest recipes of the Italian cuisine.
Our IQF patented polenta is frozen in small flakes
and can be prepared in few minutes either in a pan
or microwave.
