Gentile Cliente,
La ringraziamo per aver scelto la nostra azienda ed i nostri prodotti di qualità per
la produzione del gelato soft.
Con il presente manuale intendiamo rivolgerci agli utenti finali delle nostre mac-
chine al fine di consentire un corretto uso del prodotto.
Seguendo le istruzioni di base contenute nel manuale sarà possibile produrre
gelato soft nelle migliori condizioni possibili, nonché ottenere un prodotto quali-
tativamente valido.

1. INTRODUZIONE
Questo manuale, redatto tenendo conto delle direttive comunitarie sulle norme
di sicurezza, ha il fine di illustrare all’utente in possesso della macchina le mo-
dalità per un corretto utilizzo della stessa per mantenerne inalterate nel tempo
le caratteristiche qualitative. Pertanto, prima di operare sulla macchina e prima
delle periodiche manutenzioni bisogna leggere attentamente il manuale d’istru-
zioni. Solo seguendo con estrema attenzione le procedure qui indicate si può
essere certi di usare il macchinario correttamente e in assoluta sicurezza. Le
procedure iniziali di montaggio e installazione sono estremamente importanti.
Si raccomanda al personale responsabile del montaggio e dello smontaggio
del macchinario di seguire le procedure correttamente, evitando di commettere
errori. KLIMAGEL declina ogni responsabilità in caso di danni al macchinario
causati da disattenzioni o errori durante l’installazione o cattivo uso da parte
degli operatori.
2. INFORMAZIONI GENERALI
La macchina è stata attentamente studiata e costruita per fornire all’utente pre-
stazioni di qualità e, se usata correttamente, produce un prodotto di alta qualità,
ma, come ogni apparecchiatura meccanica, necessita di una corretta manuten-
zione e pulizia. In caso di necessità o di guasti, rivolgersi direttamente a KLIMA-
GEL che provvederà a contattare il centro assistenza più vicino.
Il servizio di assistenza di KLIMAGEL si rende disponibile a fornire qualsiasi infor-
mazione necessaria ai fini dell’attivazione e del funzionamento della macchina,
nonché a intervenire qualora dovesse verificarsi un guasto tecnico.

del produttore, il tipo di macchina ed il numero di matricola assegnato al mo-
mento della costruzione.

2.1. Ricevimento, movimentazione, apertura imballo
Prima di aprire l’imballo, controllare che non presenti rotture dovute ad urti subiti
durante il trasporto. Qualora si verifichi la presenza di un danno all’imballo che
lasci presumere danni al contenuto, avvertire immediatamente l’azienda produt-
trice, lasciando le cose come rilevate.
Non devono essere utilizzati mezzi o sistemi di sollevamento che non risponda-
no alle caratteristiche di sicurezza richieste quali:
- capacità di sollevamento inferiore al peso macchina;
- caratteristiche costruttive del sollevatore non idonee (es. forche corte);
- caratteristiche costruttive alterate dall’uso;
- funi o cavi non a norma:
- funi o cavi usurati.

La macchina deve essere immagazzinata in ambiente asciutto e privo di umidità.
Prima dell’immagazzinamento deve essere protetta con un telo a protezione da
depositi di polveri o altro.
In caso di immagazzinamento della macchina imballata, si raccomanda di non
sovrapporre le casse di imballaggio.
Una volta aperto l’imballo, i materiali utilizzati devono essere suddivisi per tipo e
smaltiti secondo le norme vigenti nel paese di destinazione.

2.2. Misure di sicurezza

10. Non azionare la macchina senza aver prima accuratamente fissato tutti i
pannelli e i cover. In caso contrario si potrebbero provocare incidenti alle
persone, causati dalle parti in movimento all’interno della macchina.
11. Non ostruire la presa d’aria e le aperture di scarico: per facilitare il riciclo
dell’aria calda la macchina deve essere posizionata ad almeno 30 cm
dalle pareti circostanti (laterali e posteriore). Non posizionare la macchina
nei pressi di fonti di calore. Una cattiva areazione della macchina ne pre-
giudica il funzionamento e la capacità produttiva.
12. È opportuno lasciare liberi gli spazi di accesso alla macchina per consentire
all’operatore di poter lavorare senza alcuna costrizione e di poter abbandona-
re immediatamente l’area di lavoro in caso di necessità. Si consiglia uno spazio
di accesso minimo all’area operativa della macchina di almeno 100 cm.

2.8. Rumorosità
Il livello di rumorosità delle macchine KLIMAGEL è inferiore a 70 dB (A).

3. PRIMA INSTALLAZIONE
Durante la prima installazione eseguire le seguenti procedure:
1. aprire l’imballo;
2. rimuovere le protezioni;
3. posizionare la macchina su un piano stabile,facendo attenzione che sia a
livello;
4. smontare la pompa;
5. togliere l’agitatore;
6. eseguire la sanificazione della macchina (pompa, cilindri, vasche, erogatore,
agitatore);
7. Montaggio;
MONTAGGIO POMPA
NOTA: Per lubrificare le componenti, utilizzare un idoneo lubrificante alimentare
(o quello inserito nel kit di pulizia) .

e) Infilare le guarnizioni OR (25) nelle boccole (24) del tubo di mandata (26).
Una volta inserite le estremità del tubo di mandata (26) nelle boccole (24),
montarlo nella vasca con l’estremità superiore posta all’interno del foro di
mandata sul coperchio pompa (9) e l’estremità inferiore nella piletta di sca-
rico della vasca (28), nella quale sarà stata preventivamente predisposta
l’apposita guarnizione OR (25). [FIGURA 3]

La prima volta , potrebbe succedere che la miscela per gelato non scorra dalla
vasca alla pompa; in questo caso si raccomanda di tirare fuori la boccola di
connessione (24) dal foro di mandata della pompa, il tubo (26), allentare i dadi
di bloccaggio (10) e lubrificare gli ingranaggi con miscela per gelato. Questa
procedura è consigliata prima di inserire il prodotto in vasca.

a) Far scorrere sia la guarnizione normale (39) sia la doppia guarnizione (40)
nelle scanalature dei pistoni di estrazione (38) e lubrificare. [FIGURA 5]
b) Inserire le guarnizioni (50) nelle scanalature poste sul retro del corpo dell’ero-
gatore (41) , e montare quest’ultimo serrandolo ai perni uscenti dal cilindro
grazie ai pomelli di serraggio (46). [FIGURA 5]
c) Far scorrere i pistoni (38) nei rispettivi alloggi dell’erogatore (41) facendo in
modo che l’incavo per le levette sia rivolto verso l’esterno della macchina.
Inserire le leve (44-45) dell’erogatore all’interno delle apposite sedi nei pisto-
ni di erogazione (38) e allinearle ai fori presenti sulla sede dell’erogatore (41).
Una volta predisposta la leva inserire la spina di bloccaggio (42), una volta
raggiunta la posizione desiderata avvitare i cappucci (43). [FIGURA 5]
d) Fissare la vaschetta per la raccolta del gelato (47) sul pannello frontale della
macchina, tramite il supporto (48) ancorandolo ai perni (49). [FIGURA 5]

3.1. Quadro comandi
Prima di attivare la macchina, Ë necessario che líoperatore conosca la funzione
di tutti i comandi.

3.2. Funzioni tasti
TASTI “UP” e “DOWN”: Vengono utilizzati per l’incremento e il decre-
mento dei valori dei parametri di riferimento stabiliti, quali temperature,
tempi, consistenza del gelato.
Se pigiati contemporaneamente sul display appaiono i valori di tempera-
tura presenti nelle vasche e nei cilindri.
TASTO ON/OFF: Accende o spegne la macchina. Il led indica lo stato
di accensione o spegnimento della macchina. In quest’ultimo caso tutti
i sistemi elettromeccanici sono disattivati mentre quelli elettronici restano
attivi.
TIME ON: Imposta la durata massima della fase di mantecazione entro la
quale deve essere raggiunta la consistenza desiderata. In caso contrario,
allo scadere del tempo, la macchina va in stato d’allarme segnalando l’er-
rore occorso. Premendo questo pulsante il led si accende, indicando che
è possibile selezionare il valore desiderato (1-10 min) tramite i tasti UP e
DOWN. Una volta impostato il valore, entro tre secondi si torna al menù
principale ed il led si spegne.
Si consiglia di impostare il valore più alto possibile.
TIME OFF: Imposta il tempo tra una mantecazione e l’altra. Ad ogni avvio
dell’agitatore viene misurata la consistenza del gelato. Premendo questo
pulsante il led si accende, indicando che è possibile selezionare il valore
desiderato (2-10 min) tramite i tasti UP e DOWN. Una volta impostato il
valore, entro tre secondi si torna al menù principale ed il led si spegne.
Si consiglia di aumentare i tempi nei momenti di minore produzione in
modo tale da evitare una continua mantecazione del prodotto .
CONSISTENCY: Regola il valore di riferimento per la consistenza del ge-
lato, al di sotto del quale sarà avviata la mantecazione. Premendo questo
pulsante il led si accende, indicando che è possibile selezionare il valore
desiderato (1-100) tramite i tasti UP e DOWN. Una volta impostato il valo-
re, entro tre secondi si torna al menù principale ed il led si spegne.
L’opportuna consistenza è frutto dell’esperienza e della composizione
della miscela.
MODE: Viene utilizzato per selezionare la modalità di utilizzo: Produzione/
Standby. Premendo il tasto è possibile alternare i due stati possibili della
macchina, produzione e standby, verificabili tramite i led posti alle estremi-
tà del pulsante. Quando si seleziona “produzione”, si accende il led in alto
a sinistra, tutti i sistemi sono operativi, la macchina può produrre gelato.
Quando si seleziona “standby”, si accende il led in basso a destra, la mac-
china provvede solo a raggiungere la temperatura di mantenimento all’in-
terno delle vasche e dei cilindri. Nel passaggio da standby a produzione
la macchina richiede un tempo di 120”. Nel passaggio da produzione a
standby la macchina richiede il tempo necessario per completare il ciclo.
Si consiglia di lasciare la macchina in standby durante la notte al fine di
conseguire un risparmio energetico e conservare la miscela.

WASH: Utilizzato per il lavaggio della macchina. Durante questa opera-
zione vengono azionate la pompa e l’agitatore mentre i circuiti frigoriferi
rimangono fermi, permettendo al detergente di ripulire la macchina. Pi-
giando il tasto si avvia l’operazione di lavaggio (led acceso), che si arreste-
rà premendo una seconda volta (led spento).
Si consiglia di effettuare un primo lavaggio automatico ed un secondo
dopo aver estratto la pompa
BEATER: Se premuto, viene avviata l’operazione di mantecazione. Il led
acceso fisso indica che si sta avviando la frusta ed è in corso la lettura
della consistenza, quando il led lampeggia indica che la frusta sta girando.
Durante il periodo di pausa, tra una mantecazioe e l’altra, è possibile ser-
vire un gelato mantecato al momento senza attendere la fine del ciclo.
TANK: Imposta la temperatura desiderata all’interno delle vasche. Pre-
mendo questo pulsante il led si accende, indicando che è possibile sele-
zionare il valore desiderato (3-15°C) tramite i tasti UP e DOWN. Una volta
impostato il valore, entro tre secondi si torna al menù principale ed il led si
spegne. Il led lampeggiante indica che l’impianto frigorifero delle vasche è
in moto.
Si consiglia di mantenere la temperatura a +5°C. Se si mantiene questa
temperatura ottimale, è possibile conservare la miscela per 3/4 giorni.
ALARMS: Con led acceso segnala la presenza di un allarme sulla mac-
china, visualizzabile pigiando sul pulsante. Una seconda pressione annulla
l’allarme.
SOUND: Premendo la prima volta si accende il led e i segnali acustici
vengono abilitati. Premendo una seconda volta si spegne il led e gli avvisi
acustici sono disabilitati.
RESET: Utilizzato all’avvio della macchina per verificare lo stato dei dispo-
sitivi di sicurezza. Va azionato ad ogni ripristino dell’alimentazione della
macchina.
Quando si passa dal ciclo NOTTE al ciclo GIORNO, prima di passare al ciclo nor-
male viene eseguito il ciclo di ripristino, 2 minuti di pausa seguiti da 15 secondi
di mantecazione

tempo massimo di mantecazione, tempo di pausa, consistenza del gelato) e
premere il tasto MODE. Questo ciclo mantiene le vasche alla temperatura impo-
stata da pannello e mantiene mantecato il gelato.
Ogni volta che la temperatura delle vasche supera il valore di riferimento stabilito,
si attiva il compressore.
Per quanto riguarda i mantecatori, il funzionamento è il seguente: dopo aver
premuto ON/OFF parte subito il mantecatore e dopo 3 secondi se la consistenza
del gelato è inferiore al valore impostato si avvia anche il compressore. Quando
il gelato arriva alla giusta consistenza il compressore si stacca e dopo 5 secondi
si ferma anche il mantecatore.Il ciclo si completa in una fase di mantecazione ed
una di pausa impostabili tramite TIME ON/TIME OFF.
Il passaggio dal ciclo GIORNO al ciclo NOTTE avviene solo al termine di un ciclo
e mai durante.
3.4. Allarmi
ALLARME LIVELLO: se il liquido rimane oltre il tempo impostato sempre sotto il
livello di soglia, la macchina va in STOP e segnala l’allarme avvenuto (il led degli
allarmi inizia a lampeggiare, si attiva il beeper e nel menù degli ALLARMI compa-
re il messaggio “ALLARME LIVELLO”.Una volta usciti dal menù degli ALLARMI
l’allarme si resetta automaticamente).
ALLARME CONSISTENZA: se durante il ciclo GIORNO il gelato non riesce ad ar-
rivare alla consistenza desiderata nel tempo massimo di mantecazione stabilito
oppure se durante il funzionamento (led di START acceso) la consistenza arriva
al valore massimo consentito (100) la macchina va in STOP e segnala l’allarme
avvenuto (il led degli allarmi inizia a lampeggiare,si attiva il beeper e nel menù de-
gli ALLARMI compare il messaggio “ALLARME CONSISTENZA”.Una volta usciti
dal menù degli ALLARMI l’allarme si resetta automaticamente).

“ALARMS” per scorrere indietro, ed il tasto “SOUND per scorrere in
avanti. Per confermare premere “TIME ON”, per uscire dal menù premere
“TIME OFF”. Per i modelli PORTOFINO e ROMA premere contemporanea-
mente per 5” il tasto “CONSISTENCY” lato destro e lato sinistro. Per scor-
rere usare i tasti “TIME ON” e “TIME OFF” lato sinistro, per confermare
il tasto “TIME ON” lato destro e per uscire il tasto “TIME OFF” lato
destro.

3.6. Smontaggio pannelli
Nei casi di manutenzione ordinaria riguardanti le parti interne della macchina (pulizia
del condensatore, controllo quadro elettrico, ecc.), è necessario smontare i pannelli
esterni. Per effettuare tale operazione munirsi di chiave a brugola. Per smontare i
pannelli laterali e posteriore inserire la chiave nei fori posti in basso, svitare i perni,
tirare in avanti la parte inferiore del pannello e sfilarlo verso il basso. Il pannello fron-
tale superiore è sostenuto dall’erogatore e dal pannello frontale inferiore, pertanto
smontando questi ultimi tale pannello si può staccare. Per lo smontaggio del pannel-
lo frontale inferiore sarà necessario solamente svitare i perni frontali. Per rimuovere
il pannello frontale superiore, tirare in avanti la parte inferiore e sfilarlo verso il basso,
disconnettere le morsettiere della scheda elettronica.
Per rimontare rifare tutto il percorso al contrario.

• Per le prime volte si consiglia di effettuare alcune prove al fine di definire i pa-
rametri migliori per la produzione di gelato soft di ottima qualità.
• Assicuratevi che la macchina sia sempre tenuta pulita.
• Per qualsiasi riparazione che si rendesse necessaria, rivolgetevi sempre ed
esclusivamente a KLIMAGEL.
• Introdurre la miscela a 4° nelle vasche di mantenimento.
4.2 Premessa
In questa sezione sono illustrate, passo dopo passo, tutte le procedure da se-
guire durante l’uso della macchina.
La macchina è caratterizzata da una motorizzazione per la movimentazione del
gruppo agitatore e dal sistema di raffreddamento con condensatore ad aria o ad
acqua. Il gelato si prepara introducendo la miscela all’interno della vasca di man-
tenimento e facendo partire il ciclo di produzione automatico fino a raggiungere
una consistenza ottimale. La miscela, già mescolata con l’aria entra nel cilindro
di mantecazione attraverso la pompa. Il gelato viene prodotto solo nel momento
in cui deve essere servito e fuoriesce attraverso l’erogatore. Contemporane-
amente, la stessa quantità di miscela viene trasferita dalla vasca superiore al
cilindro.
Se non c’è preparato nella vasca è importante spegnere la macchina. Per otte-
nere un prodotto finito della giusta durezza (consistenza) è importante prendere
in considerazione anche la temperatura dell’ambiente.

(ad ogni azionamento della leva dell’erogatore viene avviato il processo di
produzione);
11. nel caso si volesse servire gelato durante una fase di pausa della macchina
(diversa dallo STANDBY) occorre azionare il tasto “BEATER” (servire
solo a consistenza raggiunta).
Nota: Per l’impostazione della consistenza del gelato seguire le istruzioni relati-
ve al tasto ”CONSISTENCY” riportate a pag. 20. Per l’impostazione della
temperatura minima del mantecatore seguire le istruzioni relative al punto 14 del
Menù Nascosto (v. pag. 24).
Nota: Se si vuole procedere con una pulizia più accurata Vedi “LAVAGGIO DEL-
LE PARTI SMONTATE”, p. 14).
Poiché i grassi contenuti nel gelato permettono una facile proliferazione di muffe,

batteri ecc., occorre lavare con la massima cura tutte le parti a contatto con la
miscela ed il gelato.
5. MANUTENZIONE ORDINARIA
Durante la manutenzione ordinaria bisogna verificare quanto segue:
1. Controllare le varie guarnizioni: se si mostrano logore, lacerate, e se non si
incastrano bene nell’apposita sede, sostituirle.
2. Se si verificano troppo spesso situazioni di sovraccarico, controllare la cin-
ghia: se si mostra logora, lacerata, e se non si incastra bene nell’apposita
sede, sostituirla.
3. Per le operazioni di lubrificazione seguire le procedure descritte in questo
manuale.
4. Per le macchine con raffreddamento ad aria, controllare che il condensatore
non abbia accumulato polvere. Un condensatore sporco potrebbe ridurre
l’efficienza della macchina. È consigliabile pulire almeno una volta al mese il
condensatore con una spazzola a setole morbide. Non utilizzare mai caccia-
vite o altri utensili metallici per pulire le alette del condensatore.
5. Le macchine Roma 218T e Firenze 118T sono dotate di un sistema di raf-
freddamento ausiliario; se la capacità di raffreddamento della vaschetta
sembra ridursi, controllare il condensatore ausiliario. È consigliabile pulire
almeno una volta al mese i condensatori con una spazzola a setole morbide.
Non utilizzare mai cacciavite o altri utensili metallici per pulire tra le alette del
condensatore.

By this manual we aim at turning to final users of our machines in order to allow
a proper use of the product.
If you follow the basic instructions included in this manual, you will be able to
make soft ice creams in the best ways, as well as to get a high quality product.

1. INTRODUCTION
This manual, written by taking into consideration the European Community di-
rectives on the security norms, has the aim of illustrating to the user having the
machine modalities for its correct use to keep the quality characteristics unchan-
ged over the time. Therefore, the instruction manual must be read carefully befo-
re acting on the machine and before periodical maintenances. If you follow these
procedures carefully, you can be sure you are using the machine properly and
very safely. The early assembly and installation procedures are very important.
The personnel who is responsible for assembly and dismantling of the machine
is recommended to follow the procedures properly in order to avoid mistakes.
KLIMAGEL denies any responsibility in case of damages at the machine caused
by negligence or improper use by the operators.
Other than the usage and maintenance manual, the machine is provided with a
spare part list and the technical and circuit diagram.
2. GENERAL INFORMATION
The machine has been designed and built to give the user quality performances
and, if it is used properly, it produces a product of high quality, but, like any piece
of mechanical equipment, it needs a proper maintenance and cleaning. In case
of need or damage, call KLIMAGEL directly that, in turn, will contact the nearest
assistance centre.
KLIMAGEL assistance centre is available to supply any necessary information in
order to start and function the machine, as well as intervene if there is a technical
fault.

2.1. Packaging receipt, movement and opening
Before opening the package, make sure that there are no breaks due to the
knocks undergone during the transport. If there are damages to the package
showing that there are damages to the content, leave everything as you have
found them and contact the producer immediately.
The package lifting must be carried out by putting the forks of the hoist comple-
tely into the space included between the pallet feet by distributing the weight of
the machine so as to keep the package centre of mass well-balanced.
You must not use lifting means or systems that do not comply with the safety
characteristics required such as:
- power of lifting lower than the machine weight;
- not suitable hoist building characteristics (such as short forks);
- building characteristics changed by usage;
- ropes not in accordance with law:
- ropes worn.
The package is made of carton and it is closed outside with straps. Inside the
machine is completely packed with cellophane and fixed to a wooden pallet
through its feet. The corners displayed are protected with proper polystyrene
edge protectors. The package must be opened by cutting the straps by shears.
It is recommended to do it carefully because you could hurt while cutting the
straps, if they are not kept energetically during the operation.

The machine must be stored in a dry place where there is no moisture. Before
the storage it must be protected with a piece of cloth to protect it from dust or
other.
In case of storage of the machine packed, it is recommended not to superim-
pose the packing box.
Once you have opened the packaging, the materials used must be divided per
type and disposed in compliance with the norms in force in the country of de-
stination.

2.2. Security measures
This machine has been designed and produced in compliance with the safety
standards in order to guarantee users and operators’ health and safety.
WARNING: If you don’t observe the following safety rules, you could cause se-
rious damages to persons, to the machines and/or its parts.

norms, in conformity and at normal atmospheres.

3. FIRST INSTALLATION
During the first installation follow the following procedures:
1. open the packaging;
2. remove the protections;
3. put the machine on a stable plane and pay attention it is on a level;
4. dismantle the pump;
5. take the agitator off;
6. carry out the machine sanitization (pump, cylinder, tanks, dispenser, agitator);
NOTE: The machine can be reassembled only when the different components
are completely dry.

NOTE: Lubricate the components, use a suitable food lubricant (or the one in-
cluded in the cleaning kit) .

a) Put the starting gear and the driven gear (8) in the pump body (5) with the
proper gasket (7), close with the cover (9). Tighten the bolts (10) on the
pivots (2 e 3), put the gaskets (1) in the back projection of the pump body,
constituting the housing for the transmission shaft. Put the proper gasket
OR (11) in the inside housing of the frontal side of the cover (9) [FIGURE 1]
b) Put the proper gasket OR (14) in the notch of the pump regulator (15) acting
also as aspiration. [FIGURE 1]
c) Put the rubber pump regulator valve (12) in the proper spring (13). Finally,
put the regulator/aspiration pipe (15) in the lower hole of the pump cover
(9). Rotate the aspiration pipe and block the lever on the hook of the pump
cover (9). If you block the lever on different positions, you can select the
aspiration nozzle, this allows to set the pump capacity. [FIGURE 1]
d) After assembling the pump, it must be assembled on the tank by putting the
projection of the pump body in the pump bush (16). The fitting takes place
with the pump rotated of about 30°, you can make oscillate it a bit so as the
inside gears fit to the transmission shaft (22), once reached the bush bot-
tom, put the pump in a horizontal position, so that the pivot hook (2) hinges
in the bush pawl (17). [FIGURE 2]

e) Put the gaskets OR (25) in the bushes (24) of the feedpipe (26). Once put
the ends of the feedpipe (26) in the bushes (24), assemble it in the tank with
the top end within the hole of the feedpipe on the pump cover (9) and the
lower end in the drain trap of the tank (28), where the proper gasket OR (25)
will be put previously [FIGURE 3]

The first time the ice-cream mixture could not flow from the pump tank. In this
case, it is recommended to pull the connection bush (24) from the hole of the
pump feedpipe, the pipe (26), slack the docking nuts (10) and, lubricate the ge-
ars by ice-cream mixture This procedure is suggested before putting the product
in the tank.

a) Dispenser assembly: make slide the gasket (72) along the metal axle of the
agitator. Put the agitator in the cylinder and pay attention so that the square
axle end is perfectly housed in the gear flange, if the agitator mixer blade
is 15 mm far from the machine front panel, the dispenser can be assem-
bled. [FIGURE 4]. Before assembling the dispenser check that the rotation
direction of the agitator is anticlockwise. Otherwise, invert the phases in the
socket in order to change the rotation direction of the gear motors.

a) Make slide both the normal gasket (39) and the double gasket (40) in the
grooves of the extraction piston (38) and lubricate. [FIGURE 5]
b) Put the gaskets (50) in the grooves placed behind the dispenser body (41),
and assemble the latter by tightening it to the pivots coming from the cylin-
der thanks to the tightening pommels (46). [FIGURE 5]
c) Make slide the pistons (38) in the relevant dispenser housings (41) so that
the notch for the levers is turned towards the outside of the machine. Put
the levers (44-45) of the dispenser within the proper housings in the supply
pistons (38) and line them up to the holes on the dispenser housing (41).
Once put the lever, insert the lock pin (42), once reached the position desi-

d) Fix the tank to gather the ice-cream (47) on the front panel of the machine,
by the support (48) by fixing it to the pivots (49). [FIGURE 5]

3.2. Buttons functions
BUTTONS “UP” and “DOWN”: They are used to increase and decrea-
se fixed parameters values of reference, such as temperature, time, ice-
cream consistency.
If they are pressed at the same time, the values of the temperature in the
tanks and cylinders will be shown on the display.
BUTTON ON/OFF: It switches the machine on or off. The led shows
the machine state of switching on or off. In the latter case all electrome-
chanical systems are disconnected, while the electronic systems remain
connected.
TIME ON: It sets the maximum duration of the batching phase within
which the whished consistency must be reached. Otherwise, when the
allotted time expires, the machine is in state of alarm indicating the error
occurred. If you press this button, the led switches on and it indicates that
it is possible to select the whished value (1-10 min) by the buttons UP
and DOWN. Once set the value, within three seconds you go to the main
menu and the led switches off.
It is suggested to set the highest value.
TIME OFF: It sets the time between a batching and the other. Every time
you start the agitator, the ice-cream consistency is measured. If you press
this button, the led switches on and shows that it is possible to select the
whished value (2-10 min) by the buttons UP and DOWN. Once set the va-
lue, within three seconds you go to the main menu and the led switches off.
It is suggested to increase the time when there is less production so that
you avoid a continuous batching of the product .
CONSISTENCY: It sets the value of reference for the ice-cream consi-
stency, under which batching will be started. If you press this button, the
led switches on and shows that it is possible to select the whished value
(1-100) by the buttons UP and DOWN. Once set the value, within three
seconds you go to the main menu and the led switches off..
The proper consistency is the fruit of experience and of the mixture com-
position.
MODE: It is used to select the use modalities: Production/Standby. If you
press the button, it is possible to alternate the two possible states of the
machine, production and standby, verifiable by the LEDs placed at the
ends of the button. When you select “production”, the top led on the left,
all systems are operational, the machine can produce ice-cream. When
you select “standby”, the bottom led on the right, the machine only rea-
ches the maintenance temperature within the tanks and the cylinders. In
the passage from standby to production the machine requires 120”. In
the passage from production to standby the machine requires the time
necessary to complete the cycle.
It is suggested to leave the machine in standby during the night so as to
save energy and preserve the mixture.

WASH: It is used to wash the machine. During this operation the pump
and the agitator are activated while the refrigerating circuits are still and
allow the detergent to clean the machine. If you press the button, the
washing operation starts (the led is on). It will be stopped if you press a
second time (the led is off).
It is suggested to carry out before an automatic washing and then, after
pulling the pump, a second one.
BEATER: If it is pressed, the batching operation is started. The led that is
fixed on indicates that the whisk is being started and the consistency is being
read. When the led flashes, it indicates that the whisk is whipping.
During the break period, between a batching and the other, it is possible to
serve a batched ice-cream at that moment without waiting for the cycle end.
TANK: It sets the temperature wished within the tanks. If you press this
button, the led switches on and shows that it is possible to select the value
wished (3-15°C) by the buttons UP and DOWN. Once set the value, wi-
thin three seconds you go to the main menu and the led switches off. The
flashing led indicates that the refrigerating system of the tanks is in motion.
It is suggested to keep the temperature at +5°C. If you keep this optimal
temperature, it is possible to keep the mixture for 3/4 days.
ALARMS: With the led on it indicates the presence of an alarm on the
machine that can be seen by pressing the button. If you press a second
time the alarm is stopped.
SOUND: If you press this button once, the led switches on and the sound
signals are enabled. If you press it a second time, the led switches off and
the sound signals are disabled.
RESET: It is used when you start the machine to verify the state of the sa-
fety devices. It must be pressed every time you reset the machine power
supply.
If you pass from NIGHT cycle to DAY cycle, before passing to the normal cycle, the
reset cycle is carried out; 2 minutes of break are followed by 15 seconds of batching.
To activate the DAY CYCLE, set the parameters (temperature of the tanks,
batching maximum time, break time, ice-cream consistency) and press the but-
ton MODE. This cycle keeps the tanks at the temperature set and keeps the
ice-cream batched.

Every time the temperature of the tanks exceeds the vales of reference fixed, the
compressor starts.
As regards batch freezers, they work as follows: after pressing ON/OFF, the
batch freezer starts soon and, after 3 seconds, if the consistency of the ice-
cream is under the value set, also the compressor starts. When the ice-cream
reaches the right consistency, the compressor disables and, after 5 seconds,
also the batch freezer stops. The cycle finishes in a stage of batching and one of
break that can be set by TIME ON/TIME OFF.
The passage from the cycle DAY to the cycle NIGHT takes place only when a
cycle has finished and never during it.
Finally, if during the batching stage the ice-cream does not reach the consisten-
cy within the maximum time fixed, the machine STOPS (“consistency alarm”).
To activate the WASHING CYCLE, press before the button WASH, put the ma-
chine ON. When this cycle is selected, any cycle in progress at that moment is
immediately interrupted and the ON/OFF led starts to flash. The ON/OFF led
switches off if you press OFF or if you disable the washing cycle.
After 2 seconds of break, the batch freezer starts to turn.
3.4. Alarms
LEVEL ALARM: if the liquid remains over the time set always under the threshold level,
the machine STOPS and warns of the alarm occurred (the alarms led starts to flash,
the beeper is activated and in the ALARMS menu the message “LEVEL ALARMS”
appears. Once you quit the ALARMS menu, the alarm resets automatically.
CONSISTENCY ALARM: if during the DAY cycle the ice cream cannot reach the
wished consistency in the maximum batching time fixed or if while it is working
(START led is on) the consistency reaches the maximum value allowed (100), the
machine STOPS and warns of the alarm occurred (the led of alarms starts to flash,
the beeper is activated and in the ALARMS menu the message “CONSISTENCY

• Put the mixture at 4°C in the maintenance tanks.
4.2 Premise
In this section you can find, step by step, all the procedures to follow while using
the machine.
The machine is characterized by a motorization to move the agitator group and
the cooling system with air or water condenser. The ice-cream is made by put-
ting the mixture within the maintenance tank and by making start the automatic
production cycle to reach an optimal consistency. The mixture, already mixed
with air goes into the batching cylinder through the pump. The ice-cream is
produced only when it must be served and it comes out through the dispenser.
Contemporaneously, the same quantity of mixture is transferred from the upper
tank to the cylinder.
If there is no product in the tank, you must switch the machine off. To get a fini-
shed product having the proper consistency you must take into consideration
also the room temperature.
After you wash, sterilize and rinse completely immediately before the usage,
follow the following instructions:
1. pour the wished quantity of mixture in the tank;
2. add some mixture in the pump by unscrewing the pommels and by making
it slide among the gears, close the pump;
3. press the button “WASH” to allow the cylinder to fill;
4. press the button “ON/OFF” to start the process;
5. move the lever of the dispenser so that air comes out and part of the mixture
will be collected in a tank to be reused;
6. close the lever of the dispenser when the cylinder is full and air will not come
out any longer;
7. press the button “WASH” to stop the operation to fill the cylinder;
8. press the button “MODE” and pay attention it is in production modality;
9. press the button “ON/OFF” to start batching and cooling and so pro-
duction (the batch freezer will stop once reached the fixed consistency);
10. it will be possible to serve the ice-cream once reached the fixed consistency
(every time the dispenser lever is moved, the production process starts);
11. if you want to serve ice-cream during the machine break time phase (dif-
ferent from STANDBY) the button “BEATER” must be pressed (serve

only when you have reached the consistency).
Note: To set the ice-cream consistency, follow the instructions related to the but-
ton ”CONSISTENCY” that can be found on page 50. To set the minimum
temperature of the batch freezer related to the point 14 of the Hidden Menu (see
page 54).

As fats included in the ice-cream allow an easy proliferation of mould, bacteria,
and so on, you must wash all the parts having a contact with the mixture and
the ice-cream carefully.

5. ORDINARY MAINTENANCE
During the ordinary maintenance it must be checked as follows:
1. Check the different gaskets: if they are frayed, torn and they do not fit well in
the proper seat, replace them.
2. If situations of overload often occur, check the belt: if it is frayed, torn and
does not fit well in the proper seat, replace it.
3. As concerns lubrication operations, follow the procedures described in this
manual.
4. As concerns the machines having air cooling, check the condenser has ac-
cumulated no dust. A dirty condenser could reduce the machine efficiency.
It is advisable to clean the condenser at least once a month by a soft bristle
brush. Do not use screwdrivers or any other metallic tools to clean the con-
denser tongues.
5. The machines Roma 218T and Firenze 118T are equipped with an auxiliary
cooling system; if the tank cooling capability reduces, check the auxiliary
condenser. It is advisable to clean the condensers at least once a month by
a soft bristle brush. Do not use any screwdrivers or any other metallic tools
to clean between the condenser tongues.

haute qualité, mais, comme toute installation mécanique, nécessite d’entretien
et nettoyage corrects. En cas de nécessité ou panne, adressez directement à
KLIMAGEL qui pourvoira à contacter le centre assistance le plus voisin.
Le service d’assistance de KLIMAGEL est disponible à fournir n’importe quelle
information nécessaire afin d’activer et faire fonctionner la machine, ainsi qu’in-

2.1. Réception, déplacement, ouverture de l’emballage
Avant d’ouvrir l’emballage, contrôlez qu’il n’y a pas de ruptures dues à coups
subis pendant le transport. S’il y a la présence d’un dommage à l’emballage
qui fait présumer dommages au contenu, avertissez immédiatement l’entreprise
productrice, en laissant les choses comme vous les avez trouvées.

La machine doit être emmagasinée dans un milieu sec et dénué d’humidité.
Avant de l’emmagasinage elle doit être protégée par une toile pour la protéger
des dépôts de poussière ou autre.
En cas d’emmagasinage de la machine emballée, on recommande de ne pas
superposer les caisses d’emballage.
Une fois ouvert l’emballage, les matériaux utilisés doivent être répartis par type
et éliminés selon les normes en vigueur dans le pays de destination.

2.2. Mesures de sécurité
Cet appareil a été projeté et produit en respectant les standards de sécurité pour
garantir la santé et sécurité d’usagers et opérateurs.
IMPORTANT: Si on ne respecte pas les règles de sécurité dressées dans la liste
ci-dessous, on pourrait provoquer dommages sérieux aux personnes. Si on ne
se conforme pas à ces avertissements, on pourrait causer même dommages
irréparables à la machine et/ou parties d’elle.

11. N’obstruez pas la prise d’air et les ouvertures de déchargement: pour fa-
ciliter le recycle de l’air chaude la machine doit être positionnée à au mois
30 cm des murs environnants (latéraux et postérieurs). Ne positionnez
pas la machine aux alentours de la chaleur. Une mauvaise ventilation de la
machine ne compromet pas le fonctionnement et la capacité productive.
12. Il est opportun de laisser libres les espaces d’accès à la machine pour
consentir à l’operateur de pouvoir travailler sans constriction et de pou-
voir abandonner immédiatement la zone de travail en cas de nécessité.
On conseille un espace d’accès minimum à la zone opérationnelle de la
machine d’au moins 100 cm.

3. PRÈMIÈRE INSTALLATION
Pendant la première installation suivez les suivantes procédures:
1. ouvrez l’emballage;
2. enlevez les protections;
3. positionnez la machine sur un plan stable en faisant attention qu’elle est à
niveau;
4. démontez la pompe;
5. enlevez l’agitateur;
6. effectuez la désinfection de la machine (pompe, cylindres, cuves, distributeur,
agitateur);
NOTE: La machine peut être montée de nouveau quand les différents compo-
sants sont complètement secs.

e) Engagez les joints OR (25) dans les bagues (24) du tube de pression (26).
Une fois insérées les extrémités du tube de pression, (26) dans les bagues
(24), montez –le dans la cuve avec l’extrémité supérieure placée à l’intérieur
du trou de pression sur le couvercle de la pompe (9) et l’extrémité inférieure
dans la bonde de décharge de la cuve (28), où préalablement a été disposé
le joint approprié OR (25). [FIGURE 3]

La première fois il pourrait arriver que le mélange pour la glace ne coule pas
de la cuve à la pompe; en ce cas on recommande de tirer dehors la bague de
connexion (24) du trou de pression de la pompe, le tube (26), lâchez les écrous
de blocage (10) et lubrifiez les engrenages par le mélange pour le glace. Cette
procédure est conseillée avant d’insérer le produit dans la cuve.

a) Assemblage du distributeur: faites écouler le joint (72) le long de l’axe métalli-
que de l’agitateur. Insérez l’agitateur dans le cylindre, en faisant attention que
l’extrémité carrée de l’axe est parfaitement placée dans la bride du moteur-
réducteur, si l’aube de l’agitateur se trouve à 15 mm du panneau frontal de la
machine, on peut passer à l’assemblage du distributeur. [FIGURE 4].
Avant de monter le distributeur vérifiez que le sens de la direction de l’agita-
teur soit dans le sens inverse des aiguilles d’une montre. Si ce n’est pas ainsi,
inversez les phases dans la prise électrique afin de modifier le vers de rotation
des moteurs-réducteurs.

de façon que le creux pour les leviers est tourné vers l’extérieur de la ma-
chine. Insérez les leviers (44-45) du distributeur à l’intérieur des logements

se trouvent sur le logement du distributeur (41).Une fois préparé le levier,
insérez le boulon (42), une fois atteinte la position désirée vissez les capu-

3.2. Fonctions des touches
“UP” et “DOWN”: Elles sont utilisées pour l’augmentation et la diminution
des valeurs des paramètres de référence établis, comme la température,
les temps, la consistance de la glace.
Si elles sont appuyées en même temps su le visuel les valeurs de tem-
pérature qui sont dans les cuves et dans les cylindres apparaissent.
ON/OFF: Elle démarre ou arrête la machine. Le DEL indique l’état de dé-
marrage ou arrêt de la machine. En ce cas tous les systèmes électromé-
caniques sont désamorcés alors que ceux électroniques restent actifs.
TIME ON: Elle programme la durée maxime de la phase de malaxage
où on doit atteindre la consistance désirée. En cas contraire, quand le
temps expire, la machine va en état d’alarme et signale l’erreur qui s’est
produit. En appuyant ce touche le DEL s’allume et indique qu’il est pos-
sible de sélectionner la valeur désirée (1-10 min) par les touches UP et
DOWN. Quand vous avez réglé la valeur, dans trois secondes on retourne
au menu principal et le DEL s’allume.
On conseille de régler la valeur la plus haute possible.
TIME OFF: Elle règle le temps entre un malaxage et l’autre. A chaque dé-
marrage de l’agitateur la consistance de la glace est mesurée. En appuyant
cette touche le DEL s’allume et indique qu’il est possible de sélectionner la
valeur désirée (2-10 min) par les touches UP et DOWN. Quand vous avez
réglé la valeur, dans trois secondes on retourne au menu principal et le DEL
s’allume. On conseille d’augmenter les temps en moments de moindre pro-
duction de façon à éviter un malaxage du produit continuel .
CONSISTENCY: Elle règle la valeur de référence pour la consistance de
la glace, au dessous de laquelle le malaxage sera démarré. En appuyant
cette touche la DEL s’allume et indique qu’il est possible de sélectionner
la valeur désirée (1-100) par les touches UP et DOWN. Quand vous avez
réglé la valeur, dans trois secondes on retourne au menu principal et le
DEL s’allume. L’opportune consistance est le résultat de l’expérience et
de la composition du mélange.
MODE: Elle est utilisée pour sélectionner la modalité d’utilisation: Pro-
duction/En veille. En appuyant la touche il est possible d’alterner les deux
états possibles de la machine, production et en veille, vérifiable par les
DELs placés aux extrémités du bouton. Quand on sélectionne “produc-
tion”, le DEL en haut à gauche s’allume, tous les systèmes sont opéra-
tionnels, la machine peut produire la glace. Quand on sélectionne “en
veille”, le DEL en bas à droite, la machine n’atteint que la température de
maintien à l’intérieur des cuves et des cylindres. Pour le passage de en
veille à production la machine demande un temps de 120”. Pour le pas-
sage de production à en veille la machine demande le temps nécessaire
pour compléter le cycle.
On conseille de laisser la machine en veille pendant la nuit de façon à
résulter un épargne énergique et conserver le mélange.

WASH: Utilisée pour le nettoyage de la machine. Pendant cette opération
la pompe et l’agitateur sont actionnés pendant que les circuits frigidaires
restent arrêtés, en permettant au détergent de nettoyer la machine. En
appuyant la touche l’opération de nettoyage commence (DEL allumé), qui
s’arrêtera en appuyant une deuxième fois (DEL éteint).
On conseille d’effectuer un premier nettoyage automatique et un second
après avoir extrait l
BEATER: Si elle est appuyée, commence l’opération de malaxage. Le DEL
allumé fixe indique que le fouet est en train de se mettre en marche et la con-
sistance est en train d’être lue, quand le DEL clignote, il indique que le fouet
est en train de tourner.
Pendant la période de pause, pendant un malaxage et l’autre, il est possible
de servir une glace mélangée à ce moment là sans attendre la fin du cycle.
TANK: Elle règle la température désirée dans les cuves. En appuyant cet-
te touche le DEL s’allume et indique qu’il est possible de sélectionner la
valeur désirée (3-15°C) par les touches UP et DOWN. Quand vous avez
réglé la valeur, dans trois secondes on retourne au menu principal et le
DEL s’éteint. Le DEL clignotant indique que l’installation frigidaire des cu-
ves est en marche. On conseille de maintenir la température à +5°C. Si
on maintient cette température optimale, il est possible de conserver le
mélange pour 3/4 jours.
ALARMS: Quand le DEL est allumé, il signale la présence d’une alarme
sur la machine, visualisable en appuyant sur le bouton. Une deuxième
pression annule l’alarme.
SOUND: En appuyant la première fois le DEL s’allume et les signaux
acoustiques sont activés. En appuyant une deuxième fois le DEL d’éteint
et les signaux acoustiques sont désactivées.
RESET: Utilisée au démarrage de la machine pour vérifier l’état des dispo-
sitifs de sécurité. Elle est active à chaque restauration de l’alimentation de
la machine.
Quand on passe du cycle NUIT au cycle JOUR, avant de passer au cycle normal
le cycle de restauration est exécuté, 2 minutes de pause suivies de 15 secondes
de malaxage.
Pour activer le CYCLE JOUR, il faut régler les paramètres (température des cuves,

temps maxime de malaxage, temps de pause, consistance de la glace) et appuyer
la touche MODE. Ce cycle maintient les cuves à la température réglée sur le pan-
neau et maintient malaxée la glace. Quand la température des cuves dépasse cette
valeur, le compresseur s’active En ce qui concerne les turbines, le fonctionnement
est le suivant: après avoir appuyé ON/OFF la turbine s’active et après 3 secondes, si
la consistance de la glace est plus basse que la valeur réglée, même le compresseur
s’active. Quand la glace atteint la juste consistance, le compresseur s’éteint et après
5 secondes même la turbine. Le cycle se complète dans une phase de malaxage
et une de pause réglable par TIME ON/TIME OFF. Le passage du cycle JOUR au
cycle NUIT n’arrive qu’à la fine d’un cycle et jamais pendant. Enfin, si pendant la
phase de malaxage la glace ne réussit pas à atteindre la consistance dans le temps
maxime établi la machine va en STOP (“alarme consistance”). Pour activer le CYCLE
DE NETTOYAGE, if faut appuyer d’abord la touche WASH et mettre la machine en
ON. Quand ce cycle est sélectionné, n’importe quel cycle en marche en ce moment
est immédiatement arrêté et le DEL ON/OFF commence à clignoter. Le DEL de ON/
OFF s’éteint en appuyant OFF ou en désactivant le cycle de nettoyage. Après 2
secondes de pause la turbine commence à tourner.
3.4. Alarmes
ALARME NIVEAU: si le liquide reste plus que le temps réglé toujours sous le
niveau seuil, la machine va en STOP et signale que l’alarme est arrivé (le DEL
des alarmes commence à clignoter, s’active le beeper et dans le menu des
ALARMES apparaît le message “ALARME NIVEAU”. Quand on sort du menu
des ALARMES, l’alarme se remet à l’état initial automatiquement).
ALARME CONSISTANCE: si pendant le cycle JOUR la glace ne réussit pas à
arriver à la consistance désirée dans le temps maxime de malaxage établi ou si
pendant le fonctionnement (DEL de START allumé) la consistance arrive à la valeur
maxime consentie (100) la machine va en STOP et signale l’alarme qui a eu lieu (le
DEL des alarmes commence à clignoter, s’active le beeper et dans le menu des
ALARMES le message “ALARME CONSISTANCE” apparaît. Quand on sort du
menu des ALARMES, l’alarme se remet à l’état initial automatiquement).

• Les premières fois on conseille d’effectuer des essais afin de définir
les meilleurs paramètres pour la production de la glace d’excellente qualité.
• Assurez-vous que la machine est toujours propre.
• S’il est nécessaire un dépannage, adressez-vous toujours et exclusivement
à KLIMAGEL.
• Introduisez le mélange à 4°C dans les cuves de maintien.
4.2 Préliminaire
Dans cette section sont illustrées attentivement toutes les procédures à suivre
quand vous utilisez la machine.
La machine est caractérisée d’une motorisation pour le mouvement du group
agitateur et du système de refroidissement par condensateur par air ou eau. La
glace est préparée en introduisant le mélange dans la cuve de maintien et en fai-
sant partir le cycle de production automatique jusqu’à rejoindre une consistance
optimale. Le mélange, déjà mélangé avec l’air entre dans le cylindre de malaxa-
ge par la pompe. La glace n’est produite qu’au moment où elle doit être servie
et elle sort par le distributeur. Au même temps, la même quantité de mélange est
transférée de la cuve supérieure au cylindre.
S’il n’y a pas de produit dans la cuve, vous devez arrêter la machine. Afin d’ob-
tenir un produit fini avec la juste dureté (consistance) vous devez prendre en
considération même la température ambiante.

Puisque les gras contenus dans la glace permettent une facile prolifération de
moisi, bactéries, etc., nettoyez très soigneusement toutes les parties qui ont
contact avec le mélange et la glace.
5. ENTRETIEN ORDINAIRE
Pendant l’entretien ordinaire il faut vérifier comme ci-dessous:
1. Contrôlez les différents joints s’ils semblent usés et ne s’encastrent pas bien
dans le logement approprié, replacez-les.
2. S’il y a souvent des situations de surchargé, contrôlez la courroie: si elle semble
usée et ne s’encastre pas bien dans le logement approprié, replacez-la.
3. Pour les opérations de lubrification suivez les procédures décrites dans ce
manuel.
4. Pour les machines avec refroidissement par air, contrôlez que le condensa-
teur n’a pas accumulé de poussière. Un condensateur sale pourrait réduire
l’efficacité de la machine. On conseille de nettoyer le condensateur au moins
une fois par mois par une brosse avec des soies molles. N’utilisez pas de
tournevis ou outils métalliques pour nettoyer les ailettes du condensateur.
5. Les machines Roma 218T et Firenze 118T sont douées d’un système de
refroidissement auxiliaire; si la capacité de refroidissement de la cuve sem-
ble se réduire, contrôlez le condensateur auxiliaire. On conseille de nettoyer
le condensateur au moins une fois par mois par une brosse avec des soies
molles. N’utilisez pas de tournevis ou outils métalliques pour nettoyer les
ailettes du condensateur.
