Fin dagli albori della civiltà il vino è stato fonte di piacere per l'umanità. Una recente ricerca suggerisce che la vinificazione abbia
avuto origine nella regione del Caucaso dell'Asia centrale circa 5.000 anni fa, probabilmente per caso.
The difference detiene a Red wine and a White wine; the red is fermented with
the skins, which contain almost all the tannins and colored
compounds. White wine is produced from white or black grapes;
the latter is separated from the skins.
Temperature and time are important because they affect the
flavor of the wine. Fermentation is complete when all sugars have
been fermented or when the alcohol level is high enough to inhibit further yeast
action.
La differenza tra un vino rosso e un vino bianco è che il rosso viene fermentato con le bucce, che contengono quasi tutti i tannini
e i composti colorati. Il vino bianco è prodotto da uve bianche o nere; quest'ultimo viene separato dalle bucce.
La temperatura e il tempo sono importanti perché influenzano il sapore del vino. La fermentazione è completa quando tutti gli
zuccheri sono stati fermentati o quando il livello di alcol è abbastanza alto da inibire un'ulteriore azione del lievito.
The sun, fauna and flora influence the growth of the vines.
Their roots must reach as low as possible, to better
incorporate the lethal rot. The manure must be well rotted,
as fresh manure can burn the roots of the vine.
Il sole, la fauna e la flora influenzano la crescità delle Viti. Le loro radici devono arrivare il più in
basso possibile, per incorporare meglio il letale marcito. Il letame deve essere ben marcito, poichè il letame
fresco può bruciare le radici della vite.
The vine will produce fruit in the fist two years; this fruit is best left on the vine
but thinned by removing 2/3 of the grapes taht have formed within each bunch.
Finally, in the third year tuo can plan to produce some usable fruits.
La vite produrrà frutto nei primi due anni; è preferibile lasciare questo frutto sulla pianta ma diluirlo eliminando 2/3 degli acini
che si sono formati all'interno di ciascun grappolo. Infine, nel terzo anno potrete pianificare la produzione di alcuni frutti
utilizzabili.
CHAMPAGNE
Champagne is a sparkling wine named after the Champagne Region of France
and produced by inducing the in-bottle secondary fermatation. The First
fermentation takes place as usual; producing a "base wine", which is assembled
with the addition of other wines and then bottled.
Lo Champagne è un vino spumante che prende il nome dalla regione francese dello Champagne e prodotto inducendo la
fermata secondaria in bottiglia. La Prima fermentazione avviene normalmente; producendo un “vino base”, che viene
assemblato con l'aggiunta di altri vini e poi imbottigliato.
The wine is bottled by adding a small amount of yeast and sugar. This blend is
left to age for a year and a half to three years. The bottles are subjected to a
process that first involves screening and then disgorgement.
1. Sieving: the bottles are rotated and moved gradually every day, so as to allow
the sediment to collect in the neck of the bottle.
2. Disgorgement: The neck part of the bottle is frozen, in order to remove the
lees more easily and introduce the sugar cork with the appropriate metal cage.
Il vino viene imbottigliato aggiungendo una piccola quantità di lievito e zucchero. Questa miscela viene lasciata invecchiare da
un anno e mezzo a tre anni. Le bottiglie vengono sottoposte ad un processo che prevede prima la vagliatura e poi la sboccatura.
1. Setacciatura: le bottiglie vengono ruotate e spostate gradualmente ogni giorno, in modo da permettere al sedimento di
raccogliersi nel collo della bottiglia.
2. Sboccatura: La parte del collo della bottiglia viene congelata, per eliminare più facilmente le fecce e introdurre il tappo da
zucchero con l'apposita gabbietta metallica
WINE ANALYSIS
In Chemistry we have different analysis methods to verify the quality of a wine.
We can verify:
o The Alcohol Level: With a Distillation Equipment we check the quantity of
Alcohol present in the wine
o The presence of Tannins, Polyphenols
o Volatile and Fixed Acidity: These are the first analyzes that take place as
soon as a bottle of wine is opened.
o Determination of Reducing Sugars
In Chimica abbiamo diversi metodi di Analisi per verificare la qualità di un vino. Possiamo verificare:
o Il Grado Alcolico: Con una Attrezzatura di Distillazione verifichiamo la quantità di Alcol presente nel vino
o Acidità
o La presenza di Tannini, Polifenoli
o Acidità Volatile e Fissa: Sono le prime analisi che si svolgono appena aperto una bottiglia di vino.
o Determinazione degli Zuccheri Riduttori
