Rome
Whether it’s the incredible food, the millennial history, or the friendliness of the locals, sitting at a Roman
table is always a pleasure. But a city as touristy as the Italian capital can make finding the best restaurants
rather challenging, as there are just as many dining options as you can imagine, and with that comes the risk
of getting stuck in a so-called “tourist trap.” Roman cuisine is rich, hearty, and rustic, with pasta as the star,
well accompanied by other mouthwatering specialities. Some dishes have even become national favourites, like
spaghetti alla carbonara. While traditional restaurants and rustic trattorias still dominate Rome’s dining scene
with evergreen things like bucatini all’amatriciana and Jewish artichokes, there are plenty of alternatives to
choose from, including exclusive starred menus and inventive eateries pushing tradition forward.

Florence & Tuscany
Florence is a fantastic destination, full of things to do and just as many things to eat. The city’s food scene has a
strong sense of tradition, characterized by rich flavours and a strong personality. You’ll find great street foods,
vibrant markets to explore, restaurants to try, and the region’s fantastic wines to wash it all down with. Meat is
the protagonist, with bistecca alla fiorentina, the world’s most famous T-bone steak, standing out as the culinary
symbol of Florence on local tables. However, some fantastic traditional recipes are also made with vegetables and
legumes, like pappa al pomodoro and ribollita, both made with genuine, natural ingredients. In Florence, you can
find everything from traditional trattorias to Michelin-starred restaurants, including one that holds three stars.
Just remember that Tuscan bread contains no salt, so it might take a little getting used to.

Venice
It’s not just the gondolas and masks that make Venice so popular but also its unique culinary heritage, which
boasts a variety of unique flavours and ingredients. Apart from the region’s great products, Venice’s cuisine is the
result of many interactions with foreigners back when it was a gateway between the Eastern and Western worlds.
Those interactions brought new spices and products into the local kitchens, resulting in a fusion of cultures and
customs that was incredibly modern. Today’s authentic traditional Venetian cuisine is made of simple and hearty
dishes, from sardine in saor and baccalà mantecato con polenta to Venetian-style liver or risi e bisi (rice and peas).
The island’s tiny alleys have tons of pizzerias and restaurants packed with tourists. Still, if you look closely, you can
find excellent places serving authentic local food.

Milan & Lombardia
Like any Italian place, Milan has its fair share of typical dishes that reflect the local history, terrain, and climate. Italy’s
design and fashion capital is one of the best places in the country for top-notch dining with a cool, cosmopolitan
vibe. This is where you’ll find one of the largest concentrations of Michelin stars, exclusive addresses, and culinary
rising stars. There’s always some new opening in the city, and eating out is a big part of the Milanese lifestyle.
As you head towards Lake Como, the local cuisine gets more rustic, with characterful dishes like polenta uncia
(seasoned with cheese, melted butter, and garlic) and pesce in carpione (fried in vinegar and then marinated). Here
too, there are plenty of eateries, but only a few really capture the magic of this enchanting corner of Lombardy.

Alba & Barolo
Food and wine make this Piedmontese corner of rolling hills and extensive vineyards irresistible. The cuisine is full of
flavour, colour, and tasty ingredients, with traditional dishes based on recipes that have been passed down for generations.
Additionally, the fact that the Slow Food movement, which promotes local food and traditional cooking, was born right here is
a testament to the region’s strong food culture. Local delicacies include things like vitello tonnato (whose delicious sauce is an
evolution of an 18th-century recipe), bagna cauda (a convivial dish where vegetables are dipped in a hot sauce), and a variety
of homemade pasta often served with grated truffle, Alba’s most famous product. Wine is king in Piedmont and is also used
in the preparation of many dishes, like braised meat with Barolo, risotto with Dolcetto, and rabbit with Arneis. Many of Italy’s
best restaurants can be found in this region, alongside a large number of traditional trattorias.

Alta Badia & Bolzano
This tiny valley in the heart of the Dolomites, near the Austrian border, has made a name for itself not just for its
spectacular natural wonders but also for its unique gourmet cuisine that’s earned a spot on the lists of international
gastronomes. Warm and hearty, dishes in Alta Badia are rooted in traditional farm cooking, with few, simple
ingredients ingeniously combined to create mouthwatering delicacies such as canederli (bread-based dumplings),
schlutzkrapfen (Tyrolean ravioli), and apple strudel. Each culinary creation is the result of the extraordinary
combination of Italian, Austrian and Ladin traditions, which is what makes this alpine region truly unique. The local
restaurant scene offers varied dining opportunities, from rustic farms and informal trattorias to idyllic mountain
huts and Michelin-starred venues.

rooted in peasant tradition and based on seasonal ingredients. Some local staples include baccalà alla vicentina
(cod cooked in milk) in Vicenza and lesso e pearà (meat with bread sauce) in Verona. In the north of the region,
amidst the beautiful hills of Conegliano and Valdobbiadene where the famous Prosecco sparkling wine is made,
local gastronomy is rich and varied, with typical products including cold cuts, fresh and aged cheeses, and tasty
vegetables. Variety characterize also the cuisine of Franciacorta, the capital of Italian bubbles, where menus
combine meat from the interior with fish from Iseo Lake. Beef features heavily on local menus, particularly with a
delicacy called beef in oil, whose oldest recipe dates back to the 1500s.

Those who have experienced Italy’s most famous stretch of coast know that its cuisine is indissolubly linked to
the territory, with the area’s natural beauty making its way into local cookbooks through simple, sea-to-table
ingredients and the authentic products of its mountains. In particular, Cilento’s genuine food laid the foundations
for the Mediterranean Diet, which has become wildly popular worldwide. Each town and village has its own unique
specialities, from Atrani’s sarchiapone (stuffed cylinders of long marrow filled with minced meat and cooked in a
tomato sauce) to Cetara’s colatura di acciughe (fermented fish sauce) and the minestra maritata in Cilento (a soup
made with meat and vegetable). Here, you’ll find some of the best panoramic and outdoor dining spots, so you can
enjoy the great local food with views of sparkling blue waters, picturesque harbours, and historic alleyways.

Naples & its Islands
Naples’ cuisine has been shaped by the various cultures that ruled the city throughout its history. From Greeks
and Romans to French and Spanish, local menus were enriched with all kinds of flavours from the land and the
sea. Today, the local gastronomy has something to please every taste: seafood specialities, slow-cooked delicacies,
sinful desserts, deep-fried delights, and of course, pizza. Some of the best dishes are still prepared using family
recipes - each with its own unique variation of the original recipe. The cuisine of the islands of the Gulf of Naples is
positively influenced by the proximity to the rich culinary traditions of Naples, with lots of dishes simply cooked
from fresh, genuine ingredients such as tomatoes, mozzarella cheese, and olive oil. Freshly caught fish rules local
menus, but there are also some great meat-based dishes, like the famous Ischia-style rabbit.

Taormina & Sicily
The food in Sicily reflects the island’s historic role as a crossroads of cultures and traditions. Throughout history,
the island was conquered and governed by various rulers, including Greeks, Arabs, and Normans, whose food
habits (including couscous, rice, and saffron) have made their way into local dishes. Also, Sicily’s fertile soil, which
is mainly volcanic, produces an abundance of citrus fruits that fill the air with their sweet fragrance and vines
that make excellent wines. Sicily’s restaurant scene is tasty and varied and caters to every type of diner, from
street food to Michelin-starred gastronomy. Dishes are dominated by fresh local ingredients, plenty of seafood as
well as fabulous meat-based recipes. The best restaurants on the island respect tradition without losing sight of
innovation, promising wonderful dining adventures for your palate.
