SHOW NOTES:Emily AotW: Last Podcast on the LeftMeg’s AotW: Dolly Parton’s AmericaThe Sporkful episodeRecipes:Traditional Sweet Potato CasseroleSpiced Percolator PunchChristmas Salad1 package of mini marshmallows, divided2 T butter4 eggs, beaten1 T sugar2 T apple cider vinegr1/4 c. milk1/2 t. salt1 c. whipping cream, whipped2 C red grapes, halved2 small cans mandarin oranges, drained1 small can crushed pineapplelarge jar maraschino cherries, drained, halvedEmily's mashed potato casserole4-5 lbs of russet potatoes1 stick of butter1 package of cream cheese8-12 oz of sour creamseasoned salt one big block of cheddar cheese, shreddedabout 1 cup of starchy potato water from potatoes1-1.5 cups of heavy cream1 egg beaten1 pkg of dry ranch dressing mixBoil the potatoes with about a tablespoon of salt. Save a cup of water before draining. Add the stick of butter and mash with a hand masher. Add softened cream cheese and mix. Add about half of the starchy water to fluff up the potatoes. Heat the sour cream and the heavy cream to keep it from making the potatoes too pasty. Slowly add in the heavy cream until you get a thick soup consistency. Add 1 tablespoon ranch dressing mix and taste. Add more salt or ranch dressing if needed/desired. Add in the beaten egg by tempering it first. Bake at 350 for about 45 minutes to an hour. During the last 15 minutes add shredded cheese to the top and continue cooking. Melt butter in top of double boiler.  Add combined egg, sugar, vinegar, milk and salt.  Cook over gently boiling water 2 min, stirring constantly. vAdd 2/3 of the marshmallows, sitr & beat 6-10 min til melted. Cool to room temp. Fold in whipped cream, fruit & remaining marshmallows.
