CHOCOLATE SPONGE CAKE WITH COFFEE CREAM
SERVES 10-12 PREP AND COOK: 50 MINS
6 eggs, at room temperature
1 cup caster sugar
½ cup plain flour
⅓ cup self-raising flour
¼ cup cocoa, extra to decorate
50g butter, melted, cooled
COFFEE CREAM
1 tblsp coffee granules
2 cups thickened cream
2 tblsps icing sugar mixture
1 Grease and line two 20cm round cake pans with baking paper, extending paper 2cm above pan edges.
