Marzipan surprise simnel cake
Best served with a hot cup of tea, this cake has been around since at least the Medieval times!
SERVES 11 PREP 20 MINS COOK 3 HRS
✱ 250g unsalted butter, softened
✱ 250g caster sugar
✱ 4 eggs
✱ 300g plain flour
✱ 2tbsp milk
✱ 1tsp mixed spice
✱ 500g dried mixed fruit
✱ 250g dried apricots, chopped
✱ 200g glacé cherries
✱ 100g ground almonds
✱ 500g white marzipan
✱ 3-4tbsp apricot glaze or sieved apricot jam
✱ 1tbsp icing sugar, for rolling
