This book contains 52 of the best sandwich recipes. Included are classics (like French Dips), favorites (like Beer-battered Fish Sandwiches), and my own creations (like Veggie Supreme Sandwiches).

Holly started cooking in her preteens with family dinners. The meals had themes such as Chinese or French, or they were 5-course feasts (apps, soups, salads, entrees, and desserts). The recipes were straightforward and the flavors simple. When she started cooking as an adult, there was a lot of experimentation, which lead to several inedible meals. Time, patience, and practice gave Holly the ability to blend and create new recipes. The cookbooks began as scraps of paper, quick notes, and favorite family recipes stuffed into a box. In an effort to organize them, they became documents, and finally cookbooks.

A Little Introduction
A sandwich consists of two pieces of bread with meat, cheese, or other filling between them. They are meant to be portable, or at least they use to be. Nowadays, they can be sloppy and messy, and one needs a fork and knife to consume it. An open sandwich, also known as an open face/faced sandwich, Ulrich Sandwich, bread baser, or tartine, consists of a single slice of bread with one or more food items on top.
I’ve included all three in this book. My goal was to expand my own sandwich choices, and to create easy-to-put-together meals. I chose to use mostly precooked meats. When the recipe calls for cooked chicken, I’m referring to rotisserie chicken.
The best thing about sandwiches is that they are easy to adapt to your personal preferences.
Things to do while making these:
Taste the sauces and adjust as needed.
When it calls for lettuce, use romaine or bibb (or iceberg if you swing that way). They’re considered the typical sandwich lettuces.
Substitutes for mayonnaise: plain yogurt (best for chicken salads and mixes), well-drained cottage cheese, pesto, mustard, and hummus.
Sandwiches are easily turned into wraps.
A is for ACT & Aloha Chicken Sliders
ACT: Avocado Cucumber Tomato Sandwiches
makes 2 sandwiches
4 slices bread, your favorite
2 to 4 tablespoons vegetable cream cheese spread*
arugula
12 thin slices cucumber
6 to 8 slices tomatoes
1 ripe avocado, peel, seeded, and sliced
Spread bread with cream cheese. Layer one slice of bread with arugula, cucumbers, tomatoes, and avocado. Add bread top. Repeat.
Homemade Vegetable Cream Cheese Spread
Softened 8 oz. of cream cheese. Mix in finely minced: 2 green onions, 1/2 red bell pepper and 1 teaspoon of chopped chives and dill, and 1 clove of minced garlic.
Aloha Chicken Sliders
makes 6 to 8 sliders
1/2 cup mayonnaise
2 tablespoons pineapple juice
1 tablespoon soy sauce
1 teaspoon rice wine vinegar
1 teaspoon honey
1/2 teaspoon ground ginger
1/2 teaspoon garlic powder
4 cups shredded chicken, warm or cold
6 to 8 slider rolls, halved
coleslaw
6 to 8 tomato slices
3 to 4 slices mozzarella, cut into thirds or quarters
Combine mayonnaise, pineapple juice, soy sauce, vinegar, honey, ginger, and garlic. Add chicken and mix well. On the bottom of rolls, place some coleslaw, a slice of tomato slice, and some of the chicken mixture, followed by cheese. Add the top of the roll.
