Vegetable Wellington with Steamed Greens and Gravy

This is a low FODMAP vegan take on the traditional beef Wellington, with oyster mushrooms and butternut squash. It’s a bit more of an involved recipe, but ideal for Sunday lunch or a celebration dinner.

For the wellington:

• 240g (8.4 oz) , peeled• ½ tbsp • 1 tsp • 300g (10.5 oz) • 200g (7oz) • 180g• (for brushing)• 1 tbsp
