Holly started cooking in her preteens with family dinners. The meals had themes such as Chinese or French, or they were 5-course feasts (apps, soups, salads, entrees, and desserts). The recipes were straightforward and the flavors simple. When she started cooking as an adult, there was a lot of experimentation, which lead to several inedible meals. Time, patience, and practice gave Holly the ability to blend and create new recipes. The cookbooks began as scraps of paper, quick notes, and favorite family recipes stuffed into a box. In an effort to organize them, they became documents, and finally cookbooks.

    About This Book

    This book is a play on Afternoon Teatime. Teatime is a late afternoon meal that consists of sandwiches and pastries, and of course, tea. In this book, I have paired coffee with crêpes for a fun afternoon with friends and family.

    The menus in this book include one savory and one sweet crêpe along with a side dish and a coffee recommendation. This isn't a coffee recipe book; it's a coffee time book, although there are two specialty coffee recipes. Each month is thematic and seasonal.

    There are three ways to interpret the menus for each month.

    1. Have coffee with the savory crepe and side dish.

    2. Have coffee with the sweet crepe.

    3. Have coffee with both crepes and the side dish for a crepe-fest.

    Personally, I like options 1 and 2. I have the savory version for a late lunch or dinner one week and the sweet one for a late afternoon treat another week.

    For most recipes, you can make the crêpes, unfilled, ahead of time. Reheat them before using.

    About Coffee

    Coffee is a beverage prepared by brewing the roasted or baked seeds of the Coffea plant. Where the bean grew (the region, the climate, the elevation, the soil), the type of roast (the degree of roasting), and how it is prepared factor into the final flavor of a cup of coffee.

    There are three basic roast types:

    ─ Light Roasts are light brown in color and have a dry surface. They produce a milder, lighter-bodied, higher acidic coffee. Common roast names are Cinnamon, Half City, and New England.

    ─ Medium Roasts are medium brown in color and have a dry surface. They have a stronger flavor, higher-bodied, less acidic taste. Common roast names are American, City, and Breakfast.

    ─ Dark Roasts are black in color and have an oily surface. They have a pronounced bitterness
