Holly started cooking in her preteens with family dinners. The meals had themes such as Chinese or French, or they were 5-course feasts (apps, soups, salads, entrees, and desserts). The recipes were straightforward and the flavors simple. When she started cooking as an adult, there was a lot of experimentation, which lead to several inedible meals. Time, patience, and practice gave Holly the ability to blend and create new recipes. The cookbooks began as scraps of paper, quick notes, and favorite family recipes stuffed into a box. In an effort to organize them, they became documents, and finally cookbooks.

A Little About Tea Time
Tea
refers to a meal eaten with tea. The variety and amount of food depends on a country's customs. Most people think of the English Afternoon Tea or High Tea.
Afternoon Tea or Low Tea is a light meal eaten around 4PM. Freshly brewed tea is accompanied by small, light sandwiches, scones, and assorted pastries. The term Low Tea refers to this tea being served on a tea table or coffee table (a low table).
There are three types of afternoon teas:
Cream Tea consisting of tea, scones, jam, and clotted cream;
Light Tea consisting of tea, scones, and various pastries; and
Full Tea consisting of tea, savories, scones, and various pastries.
High tea or Meat Tea is a heavier meal eaten around 5PM or 6PM. It is a combination of an afternoon tea and the evening meal. Tea is served with hardier sandwiches, hot dishes, cold meats, fish, fruit, cheese, cakes, and pastries. The term High Tea refers to this tea being served on the dining table (a high table).
Tea sandwiches are small savory sandwiches packed with flavor. The bread should be dense and sliced thinly. White bread is the most commonly used, but any bread may be used. Tea sandwiches are served crustless with a thin layer of butter, cream cheese, or similar spread on the bread. This prevents the sandwich from becoming soggy.
The menus in this book include sandwiches, an appetizer, scones or tea bread, cakes or pastries, and tea recommendations. Each month is thematic and seasonal. They are perfect for a fun family day or a get together with friends.
