This year’s Christmas game and poultry recipes have been all about the smaller meal. For those who still feel vulnerable and would prefer a quiet, small-sized celebration, a couple of partridges would be about right, while a pheasant is an ideal size for two. Yet, good as they can be, as part of a festive meal, a pheasant could do with a little more glamour.
