BANANA & CINNAMON PANCAKES WITH BLUEBERRY COMPOTE

65g wholemeal flour
2½Tbsp psyllium husk
1 tsp ground cinnamon, plus extra for sprinkling
2 x 60g eggs
125ml (½ cup) skim milk
1 small banana, mashed
2 eggwhites (from 60g eggs)
2 tsp light olive oil
