SANTA JACKET MUD CAKE
SERVES 12 PREP 25 MINS
• 250g unsalted butter, softened
• 3 cups CSR Soft Icing Sugar Mixture, sifted
• red gel food colouring
• 2 x 600g store-bought mud cakes
• 2 x 100g blocks dark chocolate (see tip)
• 1 x jam-filled biscuit
• ½ cup mini white marshmallows
1 In a bowl of a stand mixer, beat butter until pale and fluffy. Gradually add icing sugar, beating until light and fluffy. Tint buttercream icing with red gel food colouring.
2 Place one mud cake on a board, top with icing and level. Top with remaining cake and repeat with icing, then cover entire cake with icing, reserving
