    Amazing Superfoods 

    I love superfoods, never knew that I was raised with them until now. I remember my mom on Saturday mornings chopping up vegetables’ rolling up masa (flour) to make tortillas and keeping an eye on the boiling pot of frijoles (beans).  My dad would be busy listening to his vinyl records of Trio Los Ponchos waiting to be served a hot plate of veggies, frijoles, arroz (rice), and a slice of avocado. It was rare to have meat and if we did it most likely was chicken.

    I am so happy and grateful that you are interested in learning about amazing superfoods.

    I grew up in Pilsen a Chicago barrio and I always accompanied my mom to the grocery store.

    Our shopping cart was filled with a variety of fresh fruits and vegetables.  My mom was born in La Barca, Jalisco, Mexico where she learned how to cook traditional Jalisco meals. We always ate three home cooked meals daily. 

    Our meals were mostly plant based because meat was more expensive for a family of twelve. Some of her favorite superfoods which she prepared were lentils, beans, cauliflower, broccoli, oatmeal, mushrooms, and avocados.

    Saturday mornings were my favorite day of the week.  As I entered the kitchen, my mother was slightly bent over the cutting board
