Your love and support over the years has given me the strength to chase my dreams. I am a better man for having you in my life.
You complete me.
Introduction
When I started writing my first recipe book, I can honestly say I had no idea what I was doing. I'd never really done any kind of writing before. But it was an immensely rewarding experience (that nearly sent me to the looney bin!) and a great learning curve. All those months of writing, editing, typing, printing, yelling, crying, hysterical fits of laughter, insanity and lack of sleep were worthwhile in the end. I created something that I am very proud of, which also has brought a lot of pleasure to others.
So here we go again. Another cook book. This time, I'm focusing on something that is near and dear to my heart – the humble dessert.
Dessert has been getting a bad wrap of late. It's blamed for everything these days. Dessert bashing has become a populist art form. I've heard some incredible claims over the years. People blame dessert for poor oral health, obesity, childhood hyperactivity and even premature death. Of course, all of this is total nonsense.
It's true, if you don't eat a balanced diet and exercise regularly, your health will suffer. That's basic common sense. But denying yourself the occasional sweet treat because of the misguided idea that sugar, chocolate and – dare I say it – fat, will cause your teeth to fall out of your head and your waist to expand to twenty times it's size is ridiculous, and equally unhealthy.
The recipes presented in this book are not intended for regular consumption. They are for an occasional treat. I would never advocate a diet that consists entirely of whipped cream, chocolate and brown sugar. But I am a firm believer that occasional indulgence is good for the body and for the soul.
I remember my first taste of cheesecake. It was as close to a spiritual experience that I have ever had. The smell, the texture, the taste and the electrifying sensation as my central nervous system desperately tried to comprehend the sheer enormity of what it was experiencing.
Dessert is a powerful thing. It's deep and it's serious – and nothing in the world quite compares to it.
