Judy Joo worked on Wall Street before turning her passion for food and restaurants into a career. Celebrating Korean street food, the Korean-American chef, who owns Jinjuu in Soho, shares some delicious dishes served up at her latest venture, Seoul Bird, in Westfield London at Shepherd’s Bush. She talks about the challenges of opening in a pandemic, what she’d order from her own menu, and the influence of her heritage.

Judy, what can you tell us about your new venture?

“In August I opened Seoul Bird with my long-time business partner and friend Andrew Hales. Andy and I always discussed doing our own venture so this has been on the cards for a while; it’s our brainchild. It’s a fast-casual concept and we specialise in crispy double-fried Korean-style chicken.”
