    Candied Citrus peel

    Makes: 5 dozen peels

    Ingredients:

    4 oranges or other citrus fruits such as oranges, lemons, tangerines, or grapefruits

    2 cups sugar

    Extra sugar for rolling

    Directions: 

    Cut the oranges into quarters, then cut off the peel, leaving a thin layer of pith. You can eat the fruit or use it in another recipe.

    Slice the peel into thin strips about ½ inch wide.

    To blanch the peels, place them in a saucepan and fill it with enough water to cover them (about 1½ cups). Bring to a boil over medium-high heat for 1 minute.

    Drain, cover the peels with fresh water, and bring to a boil again. Repeat this process once more, for a total of 3 blanchings.

    Combine sugar and water in a clean saucepan over medium-high heat and bring to boil.

    Add the peels and reduce heat to medium or medium-low to keep the syrup at a simmer. Let the peels soak for 45–60 minutes, until they look almost translucent.

    Remove from heat, and pour the peels and syrup into a container to cool.

    Take the candied peels out of the syrup and place them on a wire rack to drain the excess syrup. Roll them
