Every year on December 9th the nation celebrates National Pastry Day.
Pastry is made up of a number of ingredients such as flour, sugar, butter, milk, baking powder, shortening and eggs.
Although there are lots of different varieties of pastry, the majority fall into one of these six categories:
Choux pastry. This pastry is extremely light and is generally filled, most popularly with cream
Flaky pastry is a simple pastry that expands when baked
Phyllo or filo pastry. This paper-thin pastry dough is usually layered
Puff pastry has multi- layers which means it perfectly puffs when baked
Shortcrust pastry is the simplest, and most basic type of pastry. It is versatile and the easiest to make from scratch
Sweetcrust pastry is similar to the shortcrust variety only sweeter
While it is easy to make your own pastry at home another option is to use store-bought, ready-made pastry. This pastry is a home cook’s best friend. It is easy to prepare and very quick to assemble making it ideal for anyone wanting to create fuss-free baked goods.
Pastry dough is a base for lots of different baked products, both sweet and savory. These include tarts, pies, pasties and quiches from classic main, Beef Wellington to artisan appetizer, Boozy Orange Baked Brie in Puff Pastry.
National Pastry Day on December 9th is the perfect time to get baking! From appetizers, to mains and desserts you too, can enjoy baking 40 sweet and savory pastry recipes to impress your family and friends.
Whether you opt for homemade or store-bought pastry, one thing is for sure though, baking has never been more fun.
The Basics
Choux Pastry
From profiteroles and éclairs to a show-stopping croquembouche, finessing your choux pastry will allow you to make some of the most delicious French fancies.
Servings: Pastry for 12 profiteroles or 6 eclairs
Total Time: 20mins
Ingredients:
⅔ cup cold water
4 tbsp + 1 tsp butter (chopped)
⅔ cup plain flour
3 medium eggs (beaten)
Directions:
1. In a saucepan over moderate heat, combine the water and butter. Cook for a few minutes until the mixture begins just to boil and the butter has melted.
2. Turn the heat down to low and stir in the flour for a few minutes until the mixture forms a ball, combing away from the sides of the pan.
3. Set to one side for 5-6 minutes.
4. Set 2 tsp of beaten egg to one side.
5. Beat the remaining egg into the dough ball until incorporated.
6. Transfer to a pastry bag and use as you wish.
Classic Puff Pastry
Classic puff pastry may be time-consuming, but it is certainly worth the effort.
Servings: Pastry for 3 sheets
Total Time: 2hours 30mins
Ingredients:
Pinch salt
1½ cups plain flour
2 tbsp lard (chopped)
½ cup ice cold water
7 ounces butter
Directions:
1. Lightly flour your worktop for kneading later.
2. Combine the salt and flour in a bowl. Add the lard and rub into the mixture using fingertips until breadcrumb-like.
3. Add the water and using a knife, cut the mixture until it comes together.
4. Transfer the dough to your worktop and knead until smooth. Cover
