Every year National Potato Day is celebrated on not one, but two days; August 19th and October 27th.
For many centuries this humble tuber has fed countless hungry mouths worldwide. In fact, the potato is the fourth most important overall crop, and the top non-cereal crop in the world.
While China remains the world’s largest potato producers, capita production in Europe is still the highest.
A fact that seems only fitting when you consider that Spain was the first to introduce the veggie to Europe courtesy of Gonzalo Jimenez de Quesada, all the way back in 1536.
It took another 85 years for the spud to arrive in the Colonies, when in 1621 the Governor of Bermuda gifted potatoes and other veggies to the Governor of Jamestown.
Today, however, it’s the Germans who take the crown as the biggest spud lovers, enjoying more than 200 pounds of potatoes each year, 60 pounds more than Americans who eat a mere 140 pounds!
Environmentally friendly and easy to grow, over 20 years ago sweet potato cuttings hitched a ride on the Columbia space shuttle, marking the first attempt at growing vegetables in space. Scientists were looking for a way in which to provide food for future long-term missions.
This year, as part of a future lunar mission, Chinese scientists intend to attempt to grow potatoes on the moon.
Made from 80 percent water, potatoes are:

Black Pudding Potato Cakes
Make use of your leftover potatoes from the night before and cook these crispy potato cakes with melted cheese.
Servings: 4
Total Time: 55mins
Ingredients:
1 pound 12 ounces Maris Piper potatoes (coarsely grated)
1¾ ounces butter
1 onion (peeled, finely sliced)
2 cloves garlic (peeled, crushed)
7 ounces black pudding (cut into ½" pieces)
3½ ounces mature Cheddar cheese (grated)
2 tbsp rapeseed oil
1 egg (fried)
Directions:
1. Preheat the main oven to 360 degrees F.
2. Add the grated potatoes to a clean tea towel and wring dry. Transfer the potatoes to a mixing bowl.
3. In a large, oven-safe frying pan melt the butter.
4. Add the onion followed by the garlic and black pudding, and cook for 6-8 minutes, until the onion is softened but not colored.
5. Remove the heat and combine
