Appetizers and Sides

Apple Cider Mussels

Popular in France, these mussels in a fish broth are a delicious appetizer.

Servings: 4

Total Time: 15mins

Ingredients:

1 tbsp olive oil

1 leek, white and pale green part only (halved, thinly sliced)

2 celery stalks (sliced)

1 medium apple (cut into ⅓" cubes)

2 garlic cloves (peeled, thinly sliced)

1 tbsp thyme leaves

2 tbsp raw, unfiltered apple cider vinegar

4 pounds black mussels (scrubbed, washed, de-bearded)

2 cups fish stock

¼ cup flat-leaf parsley leaves (coarsely chopped)

Soda bread (to serve)

Directions:

1. In a large pan, heat the oil.

2. Add the leek, celery, and apples and sauté until softened.

3. Add the garlic along with the thyme leaves and sauté for an additional 60 seconds.

4. Next, add the vinegar and black mussels.

5. Pour in the fish stock.

6. Cover with a tight-fitting lid, and cook for 7-8 minutes, stirring halfway through. Season.

7. The mussels are cooked when they are open, discard any unopened mussels.

8. Divide between 4 bowls and ladle over the broth and veggies.

9. Garnish with chopped parsley and serve with soda bread.
