Introduction
Whilst a certain, not-to-be-named chicken chain restaurant may have set certain expectations about Portuguese food, Portuguese cuisine is full of so much more! Warm yourself in winter with Cozido a Portuguesa, or cool yourself in summer with a chilled glass of ‘Poncha de Maderia’. Hopefully, you’ll also learn a little of the beautiful language too, and one day, make that trip to see just how good your homestyle cooking actually turned out!
We will ask you to jump in with an open mind as you make your way through ‘sawdust’ pudding, ‘bacon’ cake and snails(!), but we promise that a taste of Portugal will be one that you won’t regret.
Cozido a Portuguesa
What could be more Portuguese than a dish which is in itself named ‘Portuguese stew’? Portgual’s answer to the ‘peasant stew’ found in the traditional cooking of many cultures, Cozido a Portguesa is one for the meat-lovers!
Serves: 8-10
Preparation Time: 4 hours
Ingredients:
32 oz. beef chuck
16 oz. discarded pork parts (if you can stomach it, parts such as ears and trotters are the most traditional!)
12 oz. ham hock
8 oz. Portuguese smoked sausage
4 carrots
3 bay leaves
2 turnips
2 leeks
1 onion
1 potato
1 sweet potato
Pinch of salt
Pinch of pepper
Serving suggestion:
Get the whole familia over and serve this big and hearty stew with some fresh Portuguese pao (bread).
1. Set all of the beef, pork, ham hock, and sausage in a large pan and add 16 cups of water. Add in the bay leaves and bring the pot to a boil.
2. Meanwhile, peel and dice the onion.
3. Skim the foam off of the water and reduce the pot to a simmer. Add in the onion and cover the pot, leaving to simmer gently for 90 minutes.
4. Peel and chop the carrots, turnips, leeks, potato, and sweet potato.
5. Add the vegetables into the pot and season well with salt and pepper.
6. Re-cover the pot and simmer for up to another 2 hours, until everything is nice and tender.
7. Season again with salt and pepper if necessary, and remove the bay leaves before serving.
Tips: This recipe is basic and traditional. Feel free to add in your own concoction of herbs to add extra flavour if you wish.
If you have a slow cooker, you can cook the stew in there for extra added tenderness!
