Martha is a chef and a cookbook author. She has had a love of all things culinary since she was old enough to help in the kitchen, and hasn’t wanted to leave the kitchen since. She was born and raised in Illinois, and grew up on a farm, where she acquired her love for fresh, delicious foods. She learned many of her culinary abilities from her mother; most importantly, the need to cook with fresh, homegrown ingredients if at all possible, and how to create an amazing recipe that everyone wants. This gave her the perfect way to share her skill with the world; writing cookbooks to spread the message that fresh, healthy food really can, and does, taste delicious. Now that she is a mother, it is more important than ever to make sure that healthy food is available to the next generation. She hopes to become a household name in cookbooks for her delicious recipes, and healthy outlook.Martha is now living in California with her high school sweetheart, and now husband, John, as well as their infant daughter Isabel, and two dogs; Daisy and Sandy. Brazilian Pork

To kick things off we have a delicious and mouthwatering Brazilian braised pork dish that will leave you craving for more. Made with passion fruit and guajillo chiles, this dish is to die for!

Makes: 8 servings

Total Prep Time: 4 hours and 10 minutes

Ingredients:

4 pound pork shoulder

1 Tbsp. of extra virgin olive oil

1 Tbsp. of salt

1 Tbsp. of dried oregano

1 tsp. of ground cumin

1, 11.5 ounce can of Passion fruit and Orange juice cocktail concentrate

8 guajillo chiles, soaked

10 cloves of garlic

1 jalapeño pepper, stems removed

2 onions, chopped

Directions:

1. Add the guajillos into a large bowl. Cover with hot water and set aside to soak for 30 minutes. Remove and transfer into a food processor.

2. Add in the cloves of garlic, jalapeño pepper, can of orange concentrate and ½ cup of water. Blender on the highest setting until smooth in consistency. Set this mixture aside.

3. Preheat the oven to 325 degrees.

4. Slice the pork into 8 pieces and place into a large roasting pan. Season with dash of salt, dried oregano and ground cumin. Pour the chili sauce over the top and top off with the sliced onions.

5. Place into the oven to roast for 4 hours.

6. Remove and serve immediately.
