70g (2½oz) whole milk
75g (2¾oz) unsalted butter
3g (½tsp) granulated sugar
2g (½tsp) salt
100g (3½oz) plain flour
150-200g (5½-7oz) free-range eggs (about 3-4 large)
20g (¾oz) free-range egg yolk (1 large)
