SPOIL DAD on Father’s Day

CAJUN SPICED PORK RIBS

SERVES 4-6 PREP AND COOK: 2 HOURS

1.5kg American-style pork ribs
Rocket leaves, to serve

CAJUN RUB

1½ tblsps Cajun seasoning
1 tblsp chopped fresh thyme
4 cloves garlic, crushed

SPICED GLAZE

⅔ cup tomato sauce
¼ cup firmly packed brown sugar
1 tblsp Worcestershire sauce
½ tsp Tabasco sauce

1 To make Cajun rub, combine all ingredients in a large bowl.

2 Trim and discard any excess fat from pork ribs. Cut between every second rib to separate into smaller portions. Add to bowl with rub. Use your hands to apply rub over ribs. Arrange in a single layer in a large roasting pan. Pour over ½ cup of water and cover tightly with foil.

3 Cook in a moderately slow oven (160°C) for about 1 hour, 30 minutes, or until tender.
