¼ cup chopped fresh basil leaves
½ cup semi-dried tomatoes, finely chopped
2 tablespoons pine nuts
400g lean beef mince
4 shallots, thinly sliced
1 small zucchini, finely grated, squeezed of excess moisture
1 egg
120g baby rocket
1 x 250g punnet cherry tomatoes, halved
1 baby fennel bulb, thinly sliced
