Barbara Beery
Barbara Beery founded Batter Up Kids in 1991, and has since taught thousands of children the joy of cooking through year-round classes, cooking birthday parties and summer cooking camps. She has written almost a dozen cookbooks, appeared twice on the Today Show, CBN with Pat Robertson and her business has been featured in the New York Times and Entrepreneur Magazine, as well as dozens of other local and national publications. Barbara believes in teaching children about giving back to their community. She is currently working closely with and has the endorsement of Rachael Ray’s Yum-o Organization, Susan G. Komen, American Heart Association, and the Great American Bake Sale. She lives in Austin, Texas.

Makes 24 cupcakes
Preheat oven to 350 degrees.
Make cake mix according to package directions, adding vanilla and almond extract.
Mix on low speed for about 1 minute, then mix on medium for 1 more minute.
Fold in confetti sprinkles.
Line two 12-cup cupcake pans with foil cupcake liners. Spoon batter into each cup, filling three-fourths full. Bake about 25 minutes or until the tops are dark golden brown. Do not underbake.
Carefully remove cupcakes from oven and cool in pan 5 minutes. Remove from cupcake pans and cool at least 1 hour before
