BRITISH ASPARAGUS, CHICKEN & SPINACH ORZO

Serves 4 Preparation time 10 minutes Cooking time 15-20 minutes I

NGREDIENTS

• 4 tsp olive oil• Salt and freshly ground black pepper• 2 skinless chicken breasts, chopped into bite-sized pieces• 2 banana shallots, peeled and chopped• 2 cloves garlic, crushed• 200g/7oz orzo• 100ml/4fl oz chicken stock• 1 bunch fresh asparagus, washed and trimmed and cut into pieces• Zest and juice of 1 lemon• 1 x 115g bag of washed and ready prepared baby spinach• 3 tbsp grated Parmesan, plus extra to serve
