Tuscan White Bean Soup
To kick things off we have this incredibly delicious and nutritious vegan dish that is to die for. Made with mushrooms and fennel, this dish can easily turn into a filling weeknight meal.
Makes: 6 servings
Total Prep Time: 25 minutes
Ingredients:
2 Tbsp. of extra virgin olive oil
2 shallots, chopped
4 cloves of garlic, chopped
½ a bulb of fennel, chopped
8 ounces of white button mushrooms, chopped
1 sage leaf
3, 15 ounce cans of cannellini beans, drained and rinsed
4 cups of low sodium vegetable broth
½ cup of dried white wine
1 vegetable bouillon cube
1 cup of water
½ tsp. of black pepper
6 slices of French baguette bread
Extra virgin olive oil, for drizzling
Directions:
1. Place a medium pot over medium heat. Add in the extra virgin olive oil. Once hot, add in the extra virgin olive oil, chopped garlic and chopped shallot. Stir well to mix and cook for 5 minutes.
2. Add in the chopped fennel and chopped white mushrooms. Stir to mix and continue to cook for an additional 5 minutes.
3. Add in the sage leaf and cans of cannellini beans. Stir again to mix.
4. Pour in the low sodium vegetable broth, dried white wine, vegetable bouillon
