Finnish Baked Pancakes – Kropser

These baked pancakes are fluffier than the ones you may be used to. Light and airy, they’re a great way to start the morning.

Cooking Time: 35 minutes

Servings: 4


4 eggs

¼ cup sugar

Salt to taste

2 cups milk

1 ½ cups flour

½ tbsp. vanilla extract

1 cup blueberries

4 tbsp. butter


1.    Preheat the oven to 420 degrees.

2. Combine the flour, sugar and salt.

3. Stir in the eggs, milk and vanilla.

4. Use a hand mixer to whip the ingredients into a smooth batter.

5. Fold
