Baby Spinach, Feta, and Tomato Frittata

Enjoy the perfect light bite or brunch snack, healthy and satisfying frittata made with salty feta cheese and sweet cherry tomatoes.

Servings: 4

Total Time: 30mins


8 medium eggs

1 tsp sea salt (divided)

Black pepper

Nonstick cooking spray

6 ounces baby spinach (coarsely chopped)

1 cup cherry tomatoes (cut into quarters)

½ cup feta cheese (crumbled)


1. Preheat your oven’s broiler.

2. In a bowl, whisk the eggs and season with ½ tsp of sea salt and a dash of black pepper.

3. Spritz a 9" skillet with nonstick spray and set over moderate heat.

4. When the skillet is sufficiently hot, add the baby spinach and the remaining sea salt and cook until the spinach begins to wilt, this will take around 3-4 minutes.

5. Next, add the cherry tomatoes followed with the whisked eggs, and using a rubber spatula, gently stir to combine.

6. Continue cooking over moderate heat until the eggs are just set, for approximately 5 minutes, stirring and scraping the bottom of the pan every 60 seconds or so.

7. Scatter the crumbled cheese over the top, cover with a lid and continue cooking for 6-7 minutes.

8. As soon as the eggs are nearly cooked, transfer them to the broiler to brown and fully set, 3-5 minutes.

9. Slide the frittata out of the pan and slide onto a chopping board.

10. Slice, serve and enjoy.
