Afterthoughts

Introduction

The Let’s Make Brunch Cookbook has 40 sweet and savoury recipes that are worth getting out of bed for!

Dishes like California favourite Eggs Benedict made with toasted English muffins, avocado, eggs and Hollandaise sauce.

Brunch is the new go-to meal, but you may be surprised to discover just some of the weird and wonderful brunch dishes enjoyed throughout the world.

In Hong Kong, Dim Sum is a popular choice; small dumplings steamed, fried and filled with seafood, pork and veggies and chicken feet!

A visit to Kingston in Jamaica will see the brunch table set with ackee and saltfish, which combines ackee fruit with Scotch bonnet chilies.

The Brits like nothing better than a good old fry-up, consisting of sausage, egg, bacon, mushrooms, baked beans, tomatoes, and toast, washed down of course by a big mug of tea.

The Malaysians love a spicy brunch consisting of a stir-fry made with rice, meat, onions, and garlic.

Whether you go sweet, whether you go savoury or a little bit of both this one-of-a-kind brunch cookbook is guaranteed to make your day!

Baby Spinach, Feta, and Tomato Frittata

Enjoy the perfect light bite or brunch snack, healthy and satisfying frittata made with salty feta cheese and sweet cherry tomatoes.

Servings: 4

Total Time: 30mins

Ingredients:

8 medium eggs

1 tsp sea salt (divided)

Black pepper

Nonstick cooking spray

6 ounces baby spinach (coarsely chopped)

1 cup cherry tomatoes (cut into quarters)

½ cup feta cheese (crumbled)

Directions:

1. Preheat your oven’s broiler.

2. In a bowl, whisk the eggs and season with ½ tsp of sea salt and a dash of black pepper.

3. Spritz a 9" skillet with nonstick spray and set over moderate heat.

4. When the skillet is sufficiently hot, add the baby spinach and the remaining sea salt and cook until the spinach begins to wilt, this will take around 3-4 minutes.

5. Next, add the cherry tomatoes followed with the whisked eggs, and using a rubber spatula, gently stir to combine.

6. Continue cooking over moderate heat until the eggs are just set, for approximately 5 minutes, stirring and scraping the bottom of the pan every 60 seconds or so.

7. Scatter the crumbled cheese over the top, cover with a lid and continue cooking for 6-7 minutes.

8. As soon as the eggs are nearly cooked, transfer them to the broiler to brown and fully set, 3-5 minutes.

9. Slide the frittata out of the pan and slide onto a chopping board.

10. Slice, serve and enjoy.
