ONE-PAN CHICKEN WITH APPLES & PRUNES

Serves 2 Preparation time 10-15 minutes Cooking time 40-45 minutes

INGREDIENTS

• Extra virgin olive oil• 4 chicken thighs, skin on, bone in• Sea salt and freshly ground black pepper• 100ml/4fl oz dry white wine• 1 tbsp runny honey• 1½ tbsp mild apple cider vinegar or white balsamic vinegar• 100g/4oz pitted prunes• 2 large Jazz apples• 4 sprigs of fresh thyme, plus extra to garnish
