NEW POTATO SALAD WITH ASPARAGUS & BLUE CHEESE

Serves 4 Preparation time 5-10 minutes Cooking time 1-3 minutes

INGREDIENTS

• 500g/1lb 2oz asparagus• Juice of 1 lemon• 1 tbsp olive oil• Sea salt and freshly ground black pepper• 250g/9oz new or baby potatoes, boiled and cut into quarters lengthwise• 250g/9oz cherry tomatoes, halved• 50g/2oz pitted black olives, halved• 2 small shallots, peeled and finely chopped• 1 tbsp fresh basil, finely chopped• 150g/5oz crumbly blue cheese, crumbled or cut into 1cm/½in cubes
