A low-carb pasta dish that proves you don’t have to do without to be healthy. Simple recipes like this one are easy to customise, so if you’d like, add vegetables or your choice of pan seared meat. With a cook time of 20 minutes, you could feed a family of 4 in no time.

    Ingredients:

    3 slices of prosciutto

    1 cup milk (low-fat)

    ¾ cup chicken stock (unsalted)

    1 tablespoon flour (all-purpose)

    ½ teaspoon pepper powder (black)

    ½ teaspoon lemon rind (grated)

    ¼ teaspoon salt

    3 ounces cream cheese (low-fat)

    2 quarts water

    7 ounces linguine (whole-grain)

    1 cup frozen peas

    ¼ cup grated Parmesan cheese

    2 tablespoons fresh parsley (finely chopped)

    Let’s make it

    Step 1

    Start by placing the prosciutto on a paper-towel covered plate, layer this with another paper-towel. Microwave the prosciutto for around 1 ½ minutes on high. The prosciutto will be very crisp and ready to crumble. While there is not much cleanup with this method, you may choose to cook it along with the pasta.
