Angelic Appetizers
Bloody Mary Crab Cakes
Everyone loves crab cakes, and this seafood appetizer is a welcome addition to any Christmas or New Year feast.
Servings: 10-12
Total Time: 1hour 10mins
Ingredients:
2½ ounces cheese crackers
3½ ounces white crabmeat
3½ ounces brown crabmeat
2 sticks celery (finely chopped)
1 yellow onion (peeled, diced)
1 tsp fresh tarragon (finely chopped)
Freshly squeezed juice of 1 lemon
Zest of 1 lemon (finely grated)
4-6 drops Tabasco
1 tsp Worcestershire sauce
Black pepper
Vegetable oil (to fry)
1 lemon (seeded, cut into wedges)
Store-bought chili sauce (to dip)
Directions:
1. Add the crackers to a processor and blend to a fine crumb consistency. Transfer 1½ ounces to a mixing bowl and set the remainder aside on a plate for coating.
2. To the mixing bowl, add the crab meat along with the celery, onion, tarragon, lemon juice and zest, Tabasco (to taste), Worcestershire sauce and a few grounds of black pepper. Mix to combine.
3. Using 2 teaspoons, evenly divide the crab mixture to create 10-12 mini patties.
4. Coat each cake in the cracker crumbs set aside earlier and arrange on a parchment-lined baking sheet. Transfer to the fridge to chill for half an hour.
5. In a shallow frying pan, heat a little oil until it begins to shimmer.
