The Amish lifestyle is pretty much void of modern conveniences. The recipes in this book are updated for modern kitchens - each recipe tested, tasted, and tweaked to be as perfect as possible and yet easy to make.

Because you make this candy with your own ingredients, you know what's in it - no guessing or crossing your fingers when presenting your sweet creations to family and friends.

The recipes in this book are the result of Amish childhood memories and conversations with siblings. They are based on my Mom's Peanut Butter Cups recipe (included in the book) and on other Amish recipes perused for techniques and suggestions.

The recipes come with stories.

Even before the recipes, you'll find a story about a little Amish boy (me) and his adventure eating as much candy as he possibly could, with his Mom's permission.

Then, an overview of how to make the candy center and cover the candy with chocolate, so you can quickly become skilled.

In the book, you will find these chocolate-covered candy recipes and stories.

~ Crunchy peanut butter candy center (for people who like peanut butter, the crunchy kind). You'll read about how the recipe was developed from Mom's Peanut Butter Cups recipe.

~ Creamy peanut butter candy center (for people who prefer creamy peanut butter candy). The chapter contains a synopsis of how it is different from the crunchy peanut butter candy center.

~ Cinnamon candy center (for cinnamon lovers). Find out why I almost gave up on this. And about stumbling on the what worked.

~ Chocolate candy center (yes, chocolate-covered chocolate candy). It took several approaches over a few months to find an ingredient combination for the candy I remembered from childhood.

~ Mexican seasoning candy center (for people who like sweet and savory). The recipe story is about creating the special seasoning for the chocolate-covered candy.

After the recipes, you'll find information about the kinds of chocolate to use and how to melt chocolate.

In addition to Mom's Peanut Butter Cups recipe and the chocolate-covered candy recipes, there is a bonus.

The bonus is a new recipe for easy-to-make cinnamon-flavored chocolate candy. It is not a filled candy, but cinnamon-flavored chocolate. The chocolate has a subtle cinnamon flavor that makes a person smile.

All the recipes are as easy to follow as I could make them.

There is no cooking to make the candy centers. Mix the centers, cover the entire candy with melted chocolate, and let it dry.

    Imagine growing up with homemade candy — Amish homemade candy.

    It was a special treat while growing up that I never forget.

    Now imagine yourself, in your kitchen, making Amish-recipe chocolate-covered candies. And the adoration of your family and friends.

    It is a joy you won't forget, either.

    Although this book is a tribute to Mom, you are who I made it for — you, who would enjoy making some chocolate-covered candy Amish style.

    Digging into containers of candy Mom made and enjoying every taste variation are my fondest holiday memories.

    Making candy was a specialty she was known for, even among the Amish.

    Generally, Mom made extra candy to sell for a bit of cash. Sales helped pay for ingredients used to make candy for the family and for gifting.

    Mom was my best friend when I was a kid. Not because she loved candy and instilled in her son an appreciation for quality, although it may have smoothed the way. It was because I could always talk to her, as a child and as a teenager, and I would listen to what she had to say. Somehow, even as a child, I recognized the wisdom within her.

    That is why this book is a tribute to her.

    From Mom, I learned how to modify recipes. She seemed to forever be experimenting — changing quantities to change taste or consistency, switching ingredients to make new recipes, and creating recipes from scratch. Not just candy recipes, but all categories of food, from breakfast to supper, including treats for between meals, before and after.

    I learned to view recipes as conveniences, reminders of what to do to make something — not immutable rules that must be followed.

    This book takes a similar approach.

    All the featured recipes in this book were developed from one recipe of Mom's — relatively easy-to-make chocolate/peanut butter cups. Her peanut butter cups recipe, along with clues gleaned from other Amish candy recipes, conversations with siblings, and my own memories of homemade candy experienced as a child and young teen, resulted in the chocolate-covered candy recipes you find in
