Citrus fruits play a huge part in our daily lives, for example a simple glass of freshly squeezed orange juice symbolises a fresh start to a new day. Available during the colder months, they’re our go-to for vitamin C when we’ve got a cold. In fact, more than half of Australian oranges farmed are used exclusively for juice. But there’s so many other ways to use them, and we’ll show you how.

CITRUS VARIETIES

Oranges come in a number of varieties in Australia, the most common is Naval, which is perfect for cooking with as it’s seedless. Blood oranges make a great colour splash to salads and tarts, but have a very short season, from July to September.

are available most of the year, but truly peak during winter. The main varieties are Eureka (with a thick skin) and Lisbon (with a thinner and smoother skin). Lemons go hand in hand with just about anything, especially seafood, and are just as equally versatile in savoury or sweet dishes.
