Coeliac disease affects an estimated one in 70 Australians, although many will be unaware of it, attributing their symptoms to general food intolerances or irritable bowel syndrome. But it’s absolutely essential to get a proper diagnosis from a doctor, because there can be serious health consequences without proper treatment, which is a lifelong, strictly gluten-free diet. A gluten-free diet is not as easy as it sounds – gluten itself or gluten-containing ingredients are frequently used in food products you might not expect, including sauces and condiments, and although most cafes and restaurants have become savvier about catering for special diets, they may not always get it right. Hence you want to know how careful you need to be with avoiding all sources of gluten.
