WINTER SQUASH PASTRY PARCEL

A festive vegetarian main course to serve during December. Crispy puff pastry is paired with a warming filling of winter squash in Indian spices. Preparation time: 35 minutes Cooking time: 1 hour 15 minutes

■ 1 sheet ready-rolled puff pastry
■ 1 red onion, finely diced
■ 1 tbsp olive oil
■ 1 winter squash, peeled and diced into small cubes
■ 250g/8oz spinach, chopped
■ ½ tin chickpeas
■ ½ tin chopped tomatoes
■ 400ml (14fl oz) vegetable stock
■ 1 tsp cumin
■ 1 tsp curry powder
■ Small bunch coriander leaves, chopped
■ Salt and pepper

In a large pot, fry the onion in the olive oil for 5 minutes until soft,
