Air Fryer Cookbook for Beginners - Alice Winters
Chapter 1: Air Fryer Startup Guide
THE AIR FRYER IS INCREDIBLY easy to use. But, it still requires a certain amount of base knowledge in order to get the best from it. Imagine if you had no prior knowledge of an oven or a microwave, of course you would be unable to make full use of it. The same is true for the air fryer. But fear not. In this chapter, you will learn the basics that you require to use this incredible little life saver for frying, roasting, baking, and more! Although, you should still keep in mind that every brand of the air fryer is little different, and you should read the user manual that comes with your specific model.
The air frying device is incredibly versatile. Along with making traditionally fried foods, such as faux-tater tots and fries that are golden-brown and crispy to perfection, you can also make many other foods in the air fryer. For instance, why not roast a whole chicken, cook a steak, make roasted vegetables, or even dessert in your air fryer? How is all of this possible? Simply because the air fryer is similar to the standard convection oven. The air fryer is more efficient in that it circulates air entirely around the food cooking at high temperatures, allowing your food to cook more quickly and become crispier with less added fats.
When you begin using an air fryer, one of the most important choices you can make is which type to buy. There are many options, and different ones can provide different benefits. While most highly-rated air fryers will do the job, it is important to consider the size. These devices usually range between two and a half quarts and six quarts in size. If you plan to do a lot of roasting and baking in your air fryer, or have a larger family or entertain frequently, then you will most likely want a larger size.
You don’t want to overcrowd the air fryer, as that will interfere with its cooking and how crispy your food is able to get. Therefore, if you haven’t purchased your air fryer yet, consider how many servings of food you will be cooking at a time, the counter space you have in your kitchen, and what size air fryer will best fit your price range.
No matter the size of the air fryer you purchase, whether you get a small one or a large one, you can further increase its versatility if you purchase attachments. These attachments will vary in price, but in general they tend to be affordable. These attachments can include mesh baskets, racks, grilling pans, cake pans, muffin pans, wire trivets, and more. You will find that with these attachments, you are able to cook a wider variety of foods more easily. For instance, baking is much easier in the air fryer when you have the cake pans and muffin pans than it would otherwise be.

These are usually true across the board, no matter which brand or size of air fryer you are using. You will find these tips incredibly helpful and simple to implement in your daily cooking routine.
Don’t Overfill
This is important. In order to function, an air fryer must be able to effectively circulate its hot air around the food. This is interfered with when you pack your air fryer overly full in an effort to save cooking time. By doing this, you will find that your food cooks unevenly and is unable to become optimally crispy. Although, this is a little different with meats, as they shrink slightly during the cooking process. In order to fit more meat into the basket, you can try cutting larger pieces of the meat in half, or skewering small pieces.
Flip the Food
It may seem annoying , unneeded, or fussy, but remember to flip or rotate certain foods during the cooking process. This is especially true of meat and other proteins if you want them to cook evenly. This can easily be accomplished simply by using a pair of tongs to flip over a piece of meat, or shaking the basket/container that smaller pieces of food are contained within. For instance, if you shake a basket of chicken nuggets or chips, you will allow some that might not have had good access to air flow to better cook and become crispier. Overall, you will find that this step leads to a better end result, increased evenness in your dishes, and better crispiness. We like crispiness!
EVEN BETTER THAN SHAKING the basket, you may try completely removing fries, chips, and nuggets from the air frying device to really shake them up. Many people have found improved results by placing these dishes in a bowl, tossing them together with their hands or a utensil, and then placing them back in the basket for the air fryer to continue the cooking process. If you are struggling with uneven cooking or a lack of crispiness in certain dishes, then you may try this method to improve your results. You can even add more seasonings such as herbs and cheeses during this process to increase the flavor of your dishes.
Use Skewers
It can be quite fun to eat a meal of meat and/or vegetables on skewers. But, there is more to it than just the entertainment factor. By skewering your meat and vegetables, making kabobs, you are able to better fit more food into the air frying device, without overcrowding the basket. You will be able to fit a number of ingredients on multiple skewers, and then easily arrange them so that they get optimal air flow. For instance, you can skewer chicken, beef, shrimp, broccoli, bell peppers, pineapple, and much more! Get creative and see what you can put on skewers, try different ingredient combinations, and have some fun with it. This can be an especially great project for kids, and a good way to encourage them to eat more healthy foods. They are more likely to eat vegetables if they have fun putting them on a skewer alongside their favorite meats and fruits.
Either Keep Food Dry or Add Liquid
It may seem contradictory to say that food needs to be either dry or moist, but it completely depends upon the liquids we are talking about. For instance, if you have water on meat and vegetables, they are more likely to steam and stay soft than become crispy. On the other hand, if you add a small amount of fat these ingredients, it will sizzle and help them become crispy.
When cooking meats and vegetables try to use a kitchen towel or paper towel in order to remove as much excess water as you can. The exception for this is marinating. You want to shake off as much marinade as you can on most dishes, but generally, you don’t want to pat it dry unless the recipe directs you otherwise.
You don’t need to add much fat when using the air fryer, but adding a small amount can help your foods to better brown and reach a higher level of crispiness. Therefore, you can always try brushing a small amount of oil on your meats, tossing vegetables in a little olive oil, or even spraying some non-stick cooking oil on breaded and coated foods.
If you are baking with pastry dough in the air fryer, then instead of oil, try brushing the top of the dough with an egg wash. These are made by simply combining a small amount of water with an egg white, whisking it together, and then using a pastry brush to apply it to your food prior to cooking. Alternatively, you may wait and only brush the egg wash over the food during the last few minutes of cooking if it has a longer cooking time. By delaying the application of the egg wash, you can prevent foods with a longer cooking time from becoming overly brown.
Cooking a Complete Meal
You can easily cook an entire meal in the air fryer, despite the limited space. How can you do this? One easy way is to layer your foods. This way won’t make your foods crispy, but they will roast well and be full of flavor. For instance, at the bottom of your basket, you can place some Brussels sprouts, zucchini, and carrots, along with their seasonings. On top of these mixed vegetables, you can place a few seasoned chicken thighs. When cooking this way, the vegetables will turn out roasted rather than crispy like fries, but that’ s okay! In fact, by cooking this way they can often gain more flavor. With the chicken cooking on top of the vegetables, the juices will drip down, slowly adding flavor and fat to the vegetables.
You can also apply your time wisely so that you have other components of a dish cooking while your air fryer is running. For instance, you may choose to cook fries in the air fryer while simultaneously having a steak on the grill. Or, you can have a complete meal of vegetables and chicken in the air fryer, while also using the stove for cooking a sauce or gravy. If you think ahead and cook multiple components of your meal at a time—you can truly save yourself both time and energy.
Don’t Forget to Preheat
Don’t skip out on preheating your air fryer, as this will affect the cooking time and efficiency just like a conventional oven or grill. If the air fryer isn’t preheated, then the temperature of the device will be inconsistent, leading to some portions of your food cooking more quickly than others. It will also throw off how long it needs to cook, leading you to possibly undercooking or burning your food. Thankfully, preheating is simple. All you have to do is set your air fryer to the designated temperature three to five minutes before you place food within the device. This will allow your foods to cook and become crispy to perfection.
When preheating your air fryer, be sure that the basket is inside of it, as well. You want the surface that your food will be on to be evenly hot, as well.
Cooking Pre-Fried Foods
If you are on the ketogenic diet, this won’t be as much of a problem, as many pre-fried foods are high in carbohydrates and don’t fit the criteria for the keto lifestyle. However, many people
