Obesity and overweight in a food-obsessed society
Around the world, rates for obesity in adults are nearly three times what they were in 1975. In less than 50 years, we've managed to triple the rate of obesity. As of 2016, nearly 2 billion adults worldwide were considered overweight, with almost three-quarters of them considered obese. Statistics show that nearly 93.3 million adults in the United States alone were considered obese in 2016.
While modern trends consider concern over body weight to be merely cosmetic and any attempt to address obesity is considered fat shaming, obesity can cause or aggravate a host of medical conditions, including
Heart disease
Asthma
Stroke
Type 2 diabetes
And some types of cancer.
The costs of the obesity epidemic are reported to be in the billions of dollars annually in the United States alone.
It's not just adults battling weight problems. Children and adolescents around the world are getting an unhealthy start on life, and according to the World Health Organization, more of the world's population lives in countries where weight-related deaths are caused more frequently by being overweight than being underweight.
Causes of overweight and obesity can be clearly traced to diet, though more than one cause is suggested. Some studies show the rise of corn syrup and corn products in diets has risen sharply since the 1970s and obesity and overweight mirrors that rise.
Other studies show the availability of inexpensive, calorie rich foods to be at blame; others blame foods high in fat. The move from eating primarily fresh foods to eating packaged, prepared and fast foods also seems to be connected to the obesity epidemic.
The science of mouthfeel and taste
Other, more insidious explanations point to a big business model working to increase profits for corporations and discounting the quality of human lives as a direct if not intended consequence.
Within the food industry, the study of mouthfeel is a pursuit of the sensation of pleasure that is either experienced when eating a specific food or sought after. For some foods, that means whatever they're known for, the property that makes us want to eat them in the first place: the salty crunch of a chip, the smooth sweetness of ice cream.
Those sensations go right to the brain and leave us wanting more. The science of mouthfeel is working to produce food that's stuffed with calories but no real nutrients, and that also have no real mouthfeel – the cheese puff snack that dissolves in your mouth without a crunch and doesn't have quite the zip of
