Pot Roast with Mushrooms
Serves: 2
Time: 8 Hours 10 Minutes
Ingredients:
- 1 Teaspoons Garlic, Minced
- 1 Tablespoons Tomato Paste
- ¼ Teaspoons Ground allspice
- 1/8 Teaspoon Sea Salt, Fine
- Black Pepper to Taste
- 2 Carrots, Cut into 2 Inch Pieces
- 16 Ounces Beef Chuck Roast, Trimmed
- 2 Shallots, Peeled & Halved
- 1 Celery Stalk, Cut into 2 Inch pieces
- 8 Cremini Mushrooms, Halved
- 1 Sprig Thyme, Fresh
- 1 Cup Beef Broth, Low Sodium
- ¼ Cup Dry Red Wine
Directions:
- Get out a bowl and mix together your tomato paste, allspice, garlic, salt and black pepper together. Use this mixture to season your roast before putting it in the slow cooker.
- Throw in the remaining ingredients and secure the lid. Cook on low for eight hours.
