Alow supermoon hangs over the sea, lending an otherworldly glow to the jazz-funk quartet playing under the stars. A few steps away, in air-conditioned comfort, guests watch on and sip alchemical cocktails under a rotunda ceiling decorated with the periodic table of elements. This is the Department of Chemistry, part of the Université Lamarck, an institution named in honour of French naturalist, Jean-Baptiste Lamarck, and founded in 1894 on the idyllic Vietnamese fishing island of Phu Quoc.
