      Red wine & blackberry

      My father has always been there for me—with wisdom, a waterproof shoulder and wine. He has a walk–in wine fridge stocked so well that the family joke is that he’ll need to live to be two hundred to drink it all! Dad, these cupcakes are dedicated to you and hopefully we can use a special vintage (non–box) to make these together one day.

      The red wine in the recipe (I used pinotage because of its full, earthy flavor) is quite subtle initially, but after the second bite the flavor comes through beautifully. These cupcakes are even better on the second day (if there are any left) as the wine flavor seems to intensify overnight. The blackberries complement the dark chocolate cake with a slightly tart twist. The blackberry juice in the icing also underlines the wine flavors. This is my all–time favorite cupcake made especially for the world’s best
