I want to congratulate you on downloading this book and starting your journey toward a healthier, happier you!
You’ll find many kinds of soup and stew recipes, as well as some traditional slow cooker recipes that all have their roots in Persian cuisine in this book. Along with an ingredients list, you’ll find easy, step by step instructions on how to execute your chosen recipe.
Persian cuisine is varied, ancient, and multicultural. Many cultures in the Greek, Mediterranean, and Asian regions have been influenced by and have themselves influenced Persian cuisine. The borrowed flavors and recipes from India have influenced Persian food, and there are many dishes that are shared by both Turks and Iranians.
I should know, because I grew up with Persian cooking on my mother’s side. The symphony of flavors from the specially prepared meats to the delicious, aromatic spices that remind me of home, are all found in this book. I wanted to find a way to introduce the world to the cooking that I found fulfilling and comforting as a child, but I knew that most wouldn’t want to spend the traditional amount of time my mother spent over the stove all those years ago.
You see, Persian cuisine takes a long time to cook when made the traditional way. Women slave over the hot stove for hours as they season and cook their stews. They spend time meticulously getting the ratio of heady spices correct in all of their dishes, and they present their meal with such flourish that you’d believe you were dining at the White House rather than in a middle-class neighborhood in the suburbs. My mother really knew how to put together a meal.
I was first introduced to a slow cooker when I had gotten out of college and moved into my own place. Slow cookers are amazing pieces of equipment. They allow you to get the proper tenderness when cooking the meats
