Carolyn J. Franklin-Allen: Growing up in the streets of Shreveport, Louisiana, she has always known to cook family favorites. Her mom, grandmother, and great grandmother were all born and raised in Louisiana. Watching them cook in the kitchen, a young Carolyn (Jean as she was referred to by her family) Studied their styles and ways of cooking in the kitchen. As she got older, she took upon herself to start writing recipes to develop her own cooking style. One recipe after another, she got the idea to start her own cookbook. Taking advice from her family she started right away. With a dash of this and a pinch of that, she has developed CJ's Old Fashioned Cookbook.

    Old-Fashioned Tea Cake

    Cream the wet ingredients together, then add the dry ingredients into the bowl and mix well. Form the dough Into three 2-inch thick roll and wrap in waxed paper. Chill for 3 hours, then slice in ¼-inch thick slices and place on baking sheet. Bake at 350 degrees for 10 minutes, then Sprinkle with cinnamon sugar.

    Charlotte Mold

    Soften the gelatin in cold pineapple juice, add the boiling water and stir until dissolved. Add the wine and cool. Beat the egg whites until soft peaks form. Beat until stiff peaks form, adding ½ cup sugar Add remaining sugar to whipped cream, then add pineapple, fold in egg white. Fold in the gelatin and pour into a mold. Refrigerate for 2 hour or until firm.

    Celest Fig Bread

    Preheat oven to 375 degrees. Into a large bowl, add the wet ingredients mix well. Into a medium bowl, add the dry ingredients and mix. Pour the dry mixture into wet and mix well. Pour fig mixture into a greased loaf pan. Bake for 50 minutes or brown.

    Salmon Pie

    In a large bowl, combine all the ingredients and mix well. Pour the mixture into the pie crust. Cover with top pie crust and cut in center. Bake at 350 degrees for 30 minutes.

    Strawberries Banana cake

    In a large bowl cut up strawberries and bananas and mash. Add the wet ingredients. Then mix up the dry ingredients. Pour the wet into the dry ingredients mix together Pour the mixture into grease and flour Bundt pan. Bake at 350 degree for 30 minutes. Remove from pan and let cool completely.

    Sweet Potato Pie

    Preheat the oven 350 degrees. Boil sweet potatoes until tender Peel and mash sweet potatoes, and put into a large bowl. Combine all ingredients and mix well. Pour the sweet potatoes mixture into a unbaked pie crust. Bake for 40 minutes to 1 hour

    Mango Roast Chicken

    Combine the chopped mango, celery, bell pepper, red onion, oil in a bowl and toss lightly to blend. Place in cavity of chicken with mango mixture, then tie chicken legs with string to hold close to body. Place the chicken on rack in a roasting pan and add chicken broth. Cover, bake at 375 degrees for 1 hour. Combine remaining oil with remaining ingredients. Uncover chicken and brush with half of the mango mixture. Then put back into the oven for 30 minutes. Then brushing frequently with remaining mango mixture.
