    For my mother, Louise, who passed before she could try any of my Latin American inspired culinary creations, but I know she would have loved them.

    Foreword

    I am so fortunate to have Chef Mico not only as a partner, but as a full-time gourmet, plant-based chef in the house (pinch me, am I dreaming?)...I can guiltlessly and healthfully eat bread and other typically wheat-based foods again! Despite all my background in healthy living, I had no idea that there were such simple and healthy whole-foods (flourless) recipes for making bread, tortillas, pizza crusts and such. Having grown up in a whole-foods and health-conscious household, having turned vegetarian as a teenager, having traveled all around the world, having progressed to a vegan diet, then a raw-foods diet, then simply to settling on a balanced, fresh, gluten-free plant-based diet, I am no stranger to healthy, diverse and tasty foods. During the 90’s I was introduced to the raw foods lifestyle, then completed a certification class in raw food preparation, studied Natural Hygiene, became a licensed massage therapist, sold raw food products, and hosted and attended many vegan and raw potlucks, festivals and events. Natural health and healing, based in clean diet and quality nutrition, has been a passion of mine since I was a youth, and when I met Chef Mico
