    Dakos is also known as the Greek-style Bruschetta that is best for an appetizer. It usually made with bread, cheese, tomatoes, and some olive oil.

    Ingredients:

    • 4 pieces Cretan rusks, 4-inch round each

    • 4 medium tomatoes, finely chopped

    • ¾ cup of feta cheese, crumbled

    • ¼ cup of olive oil

    • 2 tablespoons red wine vinegar

    • ¼ teaspoon dried basil

    • ¼ teaspoon dried oregano

    • 4 kalamata or black olives, for garnishing

    Directions:

    1. Combine the chopped tomatoes, red wine vinegar, basil, oregano. Mix well. Set aside.

    2. Wet the rusks with small amount of water and then put on a plate. Do not wet too much it will give you a soggy bread. Texture should be crisp and breakable.

    3. Top each rusk with tomato and herb mixture and feta cheese.

    4. Drizzle with olive oil and garnish with kalamata olives.

    Ingredients:

    Meat ingredients:

    • 1 pound minced lean beef or lamb

    • ¼ cup finely chopped red onion

    • 2 cloves crushed garlic

    • 1 teaspoon onion powder

    • 1 teaspoon all-spice

    • ¼ teaspoon nutmeg

    • 1 teaspoon dried oregano

    • 1 tablespoon fresh lemon juice

    Sandwich ingredients:

    • 4 (7-inch round) pita bread

    • 1 medium tomato, thinly sliced

    • 1 medium cucumber, thinly sliced

    • 1 white onion, thinly sliced

    • 4 lettuce leaves

    • Tzatziki sauce, to serve

    Directions:

    To Prepare the Meat:

    1. Place all meat ingredients in a medium bowl and mix thoroughly. Divide the mixture equally to make four elongated patties (similar to a sausage). Cover and keep in the fridge for one hour.

    To Make the Sandwich:

    1. Preheat your grill on high. Once hot, grill the prepared gyro patties until browned and crisp on the edges, about 4 to 5 minutes on each side.

    2. Take one pita bread and spread the Tzatziki sauce on one side. Add some lettuce, sliced tomato, cucumber, and onion. Then, add one grilled patty. Drizzle with some more Tzatziki sauce if desired. Repeat procedure for remaining bread and patties. Serve and
