    Making freezer meals while I was pregnant turned out to be one of the most helpful things I could have done. I had about two months’ worth of meals that I could pop into the oven or microwave and have dinner ready with little to no hassle. That is important when you are waking up every two to three hours with a newborn all night. Recovering from childbirth takes a lot of energy. In addition to the frequent nighttime feedings, you have a new baby to care for during the day which includes more feedings, diaper changes, and the best part – bonding time. While your little one naps, you still have things to do: laundry, housework, shower, eat, sleep. Not to mention the fact that you are physically spent from giving birth, have swelling to deal with, and your hormones are riding a roller coaster. Having meals already prepared, takes at least one thing off your To-Do List.

    I started making freezer meals about two months before my due date. It was not a marathon cooking experience. I simply planned extra for the meals I was already cooking; for example, when I cooked spaghetti for dinner, I browned extra ground beef and added spaghetti sauce to it. We had enough for our meal that evening, and then I put the rest of the meat and sauce in the freezer. Later, all I had to add was pasta.

    How much you should make depends on your family and lifestyle. I have provided recipes for 10 breakfasts, 10 lunches, 30 dinners, and 10 sides/snacks/desserts. For just my husband and I, one recipe will provide two or three meals. If you have other children, the number of meals per recipe will be less. You should also consider whether you have family, friends, or church groups who will be bringing meals after your baby is born. If so, your freezer meals will last longer. Be sure to read the freezer tips in chapter six so that you make the most out of the meals you cook. You will also find some bonus meals that are so fast and easy to make that they do not need to be frozen in advance. Enjoy!

    Chapter 2: Breakfast Recipes

    Breakfast Burritos - Bacon

    1 lb bacon

    1 dozen eggs

    2 Tbsp water

    salt and pepper (to taste)

    1 cup shredded Colby Jack cheese

    12 flour tortillas

    Cook the bacon in a large skillet until crisp and set aside on paper towels to absorb the grease. (Tip: Use an electric griddle to cook more bacon at a time than a regular skillet.)

    In a bowl, beat 12 eggs with a whisk. Mix in salt, pepper, and 2 Tbsp water. Scramble in a large non-stick skillet. Pour into a bowl and set aside.

    Form an assembly line by laying out 12 strips of plastic wrap. Place a flour tortilla on each piece of plastic wrap. Place a large spoonful of eggs on each tortilla. Crumble 1-2 strips of bacon on top of the eggs. Sprinkle shredded cheese on top of the bacon.

    Tuck in the sides and roll tightly. Wrap tightly in the plastic wrap. Place all wrapped burritos in a freezer bag, label, and freeze.

    Makes 12 servings

    TO REHEAT:

    Remove the breakfast burrito from the plastic wrap. Wrap it in a paper towel and microwave for 1 minute.

    Add salsa, as desired (or as time allows)!

    Enjoy with milk, juice, or coffee!
