Rene Averett blogs regularly on her Skinny Girl Bistro site where she shares information about low carb foods, living a low carb lifestyle and many recipes. She lost 150 pounds in 2010 using the Atkins Diet and is sharing her weight loss recipes via her low carb cookbooks.  Rene hails from El Paso, Texas a good many years ago.     I have been a yo-yo dieter for most of my life and I learned a lot about how to lose weight and how to gain it. How to keep it off is the trick. Add to that, how to keep it off while still enjoying the foods I love is the challenge. I knew that if I couldn’t find a way to enjoy my favorite foods while still maintaining a very low carb lifestyle, then I would fail once again to keep the weight under control.

    One of the questions I'm asked frequently is what can I eat for breakfast? To some people the breakfast options seem to be a scrambled egg with bacon and nothing else. But the variety for breakfast is wider than you might think. This booklet brings you fifteen ways to have a good and filling breakfast that stays within your low carb requirements. Many of them do use eggs, so if eggs aren't your thing, you might want to try something else. But eggs are the base for many things that don't taste all that eggy once they are cooked, such as waffles, pancakes, and French toast. I've even included a cereal option that doesn't use eggs. The one thing that all of these have in common is that they are below ten net carbs per serving and most are below five net carbs.

    The waffles, pancakes, and breads use a low carb flour, which can be a bit challenging to locate, but the choice of low carb flours and sugar-free products that are available have expanded over the past few years. You can find low carb baking mixes, such as CarbQuick and Bob's Red Mill, as well as almond flour, coconut flour, peanut flour, and soy flour at your local market or health food store. They can also be ordered on line.

    With all the choices available now, you really can have your pancake and eat it, too. Because low carb doesn’t have to be boring.

    Now for a bit of a disclaimer. I use primarily CarbQuick for my baking mix, which is 3 net carbs per 1/4 cup. I use Almond Flour that is also 3 net carbs per 1/4 cup. All low carb products are not created equal, so be sure to check the net carb count of the flours, sugars, jams, etc. that you
